Greek Flatbread
Greek flatbread or Greek pitta, is a soft pocketless pita, making it easy to wrap around your chosen filling.

Honey glazed halloumi is a delicious and different and easy midweek dinner idea.
Stuff it into a flatbread or pitta along with a good helping of salad, and if you're extra hungry add a side of fries.
What is Halloumi?
Halloumi is a traditional Cypriot cheese made from a mixture of goat's and sheep's milk. Sometimes it is made with cow's milk.
It has a high melting point so it can easily be fried or grilled. If halloumi is overcooked then it does tend to make a squeak noise when you eat it - bizarre I know!
So what is Greek flatbread?
Greek flatbread is a soft flatbread made with yeast and is commonly served with souvlaki, gyros, salad and dips.
It's so much softer than regular pitta bread, for this reason, I often use them when I make lamb koftas with tzatziki.

- 1 x 225g pack of halloumi
- 1 teaspoon olive oil
- 2 tablespoons runny honey
- 1 tablespoon sweet smoked paprika
- Sweet pepper flakes
- 2 x Greek flatbreads or pitta, salad and your favourite sauce

Greek Flatbread with Halloumi
Ingredients
- 1 x 225g pack of halloumi
- 1 teaspoon olive oil
- 2 tablespoons runny honey
- 1 tablespoon sweet smoked paprika
- Sweet pepper flakes
- 2 x Greek flatbreads or pitta
- Salad and your favourite sauce
Instructions
- Remove the halloumi from the packaging and pat dry on kitchen paper.
- Slice into almost 1cm slices, not too thin or it will break.
- On a small plate mix together the olive oil, honey and smoked paprika.
- Add the halloumi slices and turn to coat well taking care not to break the slices. Sprinkle both sides generously with the sweet pepper flakes.
- Heat up a medium-sized frying pan and add the halloumi and fry for just a minute or so on each side.
- Serve while hot with fresh pita bread and enjoy with a nice salad and fries if you're feeling hungry!
