You can, of course, use any blue cheese such as Stilton or Roquefort.

Although Roquefort is a seriously strong-tasting blue cheese so beware!

However, my husband loves Roquefort sauce, but it really does have a powerful taste and personally, I'm not a fan and much prefer Stilton.

Question - I'm not too sure what blue cheese you can get say in the States or Australia for example, do let me know by leaving a comment below, I'm really interested to know.

Talking of Stilton I made a really nice Beef, Ale and Stilton Pie which was delicious and now that I've reminded myself I will have to make it again soon.

I've seen a Blue Cheese Burger that Jamie Oliver made, it looks great but all he did was melt blue cheese over the top.

You can add a splash of Worcestershire sauce to give it a more tangy flavour.

Use Gorgonzola for a milder flavoured sauce or Roquefort for a stronger flavoured cheese sauce.

What is blue cheese?

Blue cheese is made with cultures of the mold Penicillium.

This gives the cheese spots or veins of the mold throughout the cheese, which can vary in colour through various shades of blue and green.

This carries a distinct smell, either from that or various specially cultivated bacteria.

Some blue cheeses are injected with spores before the curds form, and others have spores mixed in with the curds after they form.

Blue cheeses are typically aged in a temperature-controlled environment such as a cave.

Blue cheese can be eaten by itself or can be spread, crumbled or melted into or over a range of other foods. Blue cheese is known for its pungent creamy texture.

Ingredients

  • 25g butter
  • 1 tablespoon plain flour
  • 150ml milk
  • 60g stilton (or other blue cheese) - chopped 
  • freshly ground black pepper to taste

Do I need any special equipment?

No, just a small saucepan, but a wooden spoon is best for making any cheese sauce.

What else can I serve blue cheese sauce with?

Aside from spooning over steak, you can also serve it as a dip for crumbed chicken or as a dip for fries or potato wedges.

Blue Cheese Sauce for Steak

You can use any blue cheese but I used Stilton - perfect with steak.
Prep time: 2 MinCook time: 5 MinTotal time: 7 Min

Ingredients

  • 25g unsalted butter
  • 1 tablespoon plain flour
  • 150ml milk
  • 60g stilton (or other blue cheese) - chopped
  • freshly ground black pepper to taste

Instructions

  1. Melt the butter in a pan over a medium heat, then stir in the flour and let cook for about 3 minutes - if you don't cook the flour your sauce will be lumpy and taste floury. You'll find a wooden spoon works best.
  2. Gradually pour in the milk, stirring constantly, until the sauce is smooth and all the milk has been added.
  3. Bring the mixture to a simmer and stir in the cheese.
  4. Cook until the cheese has melted and the sauce has thickened slightly.
  5. Season with black pepper to taste and serve.

  1. I tried this recipe with a Roquefort cheese and it was really nice.Me and my son dipped in some potato wedges,then with the last bit I put it on some toast.Thanks for sharing this recipe Jan
