Huevos Rancheros Recipe

Huevos Rancheros is my favourite Mexican breakfast recipe. Perfect for a lazy Sunday breakfast or brunch.

Huevos rancheros are cheap and easy to make and are on the table ready to eat in 10 just minutes.

The best Mexican breakfast is filled with delicious spiced and flavorful, but Mexican food doesn't have to contain chillies - so you can adapt the ingredients to suit your taste. More on that in a bit.

What is huevos rancheros

Huevos rancheros or ranch-style eggs is a breakfast dish consisting of eggs served in the style of the traditional large mid-morning fare on rural Mexican farms; source Wikipedia.

Recipe Top Tips!

To make this less spicy and if making for kids:

  • If you wish you can replace the hot chilli sauce with tomato ketchup - not traditional at all but you can do this!
  • Replace the chillies with very thinly sliced red bell pepper.
  • Use refried beans instead of the black beans - if you do you will not want to add lime or salt!
  • Replace the fets with any cheese of your choice.
