This colourful tangy coleslaw is a much healthier version of the traditional mayonnaise laden coleslaw we all know and love.

Which is Healthier - Red or White Cabbage?

In comparison to white cabbage, red cabbage contains 10x more vitamins, it has cancer-fighting flavonoids and a large number of antioxidants.

What are the Benefits of Eating Carrots?

The fibre in carrots can help keep blood sugar levels under control. And they're loaded with vitamin A and beta-carotene, which there's evidence to suggest can lower your diabetes risk.

They can also strengthen your bones as carrots contain calcium and vitamin K, both of which are important for bone health.

Is Pure Maple Syrup Good for You?

Yes, pure maple syrup is not only high in antioxidants, but every spoonful offers nutrients like riboflavin, zinc, magnesium, calcium and potassium.

Ingredients in this recipe

  • Red and white cabbage
  • Carrots
  • Red chilli
  • Spring onion (green onion)
  • Olive oil
  • White wine vinegar
  • Pure maple syrup
  • Garlic
  • Cayenne pepper
  • Salt and black pepper

Homemade Coleslaw

¼ of a medium red cabbage - thinly sliced

¼ of a medium white cabbage - thinly sliced

1 large carrot - grated

1 red chilli - seeded and finely chopped

2 spring (green) onions - sliced

For the Dressing

2 tablespoons extra virgin olive oil

2 teaspoons white wine vinegar

2 teaspoons pure maple syrup

½ clove garlic - grated or very finely chopped

pinch of cayenne pepper - to taste

pinch of salt - to taste

Freshly ground black pepper

How long will Coleslaw keep?

Coleslaw must be kept in a fridge in a small food storage container and it will last 2-3 days. Personally, I wouldn't keep it any longer than 2 days.

If your coleslaw has mayonnaise it really doesn't last long at all as you'll find the mayo turns watery and horrid, so once opened it's best eaten the same or the next day.

What food goes with Coleslaw?

Okay, this is a healthy recipe but the first thing that springs to mind is pizza! Kinda makes you feel a little less guilty than if you have the more traditional mayo coleslaw with pizza - right?

  • Burgers
  • Hot dogs
  • Lobster sandwich
  • Pulled pork sandwich
  • Most BBQ foods
  • Or, if you're really on a health kick, this no mayo coleslaw will be perfect with a pan-seared skinless chicken fillet.

Coleslaw without Mayo

A far healthier version of the more traditional coleslaw - no mayo in this recipe! Just double the recipe to serve more people.
Prep time: 15 MinInactive time: 30 HourTotal time: 30 H & 15 M

Ingredients

For the Coleslaw
  • ¼ of a medium red cabbage - thinly sliced
  • ¼ of a medium white cabbage - thinly sliced
  • 1 large carrot - grated
  • 1 red chilli - deseeded and finely chopped
  • 2 spring (green) onions - sliced thinly
For the Dressing
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons white wine vinegar
  • 2 teaspoons pure maple syrup
  • ½ clove garlic - grated or very finely chopped
  • pinch of cayenne pepper - to taste
  • pinch of salt - to taste
  • Freshly ground black pepper

Instructions

  1. Put all the prepared ingredients for the slaw into a large bowl.
  2. In a small bowl, whisk together all the ingredients for the dressing. Have a taste and adjust the seasoning - it may be you need a little more olive oil.
  3. Once you're happy with the taste, pour the dressing over the slaw and mix well.
  4. Cover with cling film and pop into the fridge for at least an hour to allow flavours to marinate together - 30 minutes will be okay if you're really in a hurry!
