Pear, Chocolate, and Coconut Superflake Crumble

Pears are just coming into season now and are one of the least allergenic of all fruits and so can be enjoyed but most people and they're so versatile too; perfect in a crumble and they go so well with chocolate.

I was recently asked to make a recipe using Cocoa and Coconut Superflakes by Nature's Path. 

To be honest, until then I hadn't tried Superflakes before but I say they make the perfect easy and healthy breakfast and are also healthy and nice and filling too.

Superflakes are made using sorghum flour, black bean flour and brown rice flour which are all made from nutrient-rich sprouted grains.

Coated in a little honey and Fairtrade cocoa Superflakes are not only nice and crunchy but are also Gluten-free and Organic as are the rest of Nature's Path products.

Pear and Chocolate Crumble

Pear and Chocolate Crumble

Delicious and different, everyone will love this pear and chocolate crumble.

Ingredients

Butter an ovenproof dish - mine was 27cmx20cm
  • 4 Organic Pears - peeled, cored and sliced
  • 3 tablespoons of Maple Syrup
  • 50ml Sweet Marsala Wine
  • ½ teaspoon Pure Vanilla Extract
For the Crumble Topping
  • 50g Organic Free Plain Flour - gluten-free if you prefer
  • 40g Organic Rolled Oats
  • 25g Caster Sugar
  • ½ teaspoon Ground Cinnamon
  • 50g Unsalted Organic Butter - still cold from the fridge and cut into cubes
You will also need
  • 60g Nature's Path Cocoa and Coconut Superflakes - broken into smaller pieces
  • 30g Chopped Almonds
  • 25g Chopped Hazelnuts
  • 80g Fair Trade Dark Chocolate Chips - divided into 50g and 30g
  • 15g Unsweetened Coconut Flakes

Instructions

  1. Lightly bash the Superflakes into smaller pieces and set them aside.
  2. Lay the pears evenly in a buttered dish. Mix together the Marsala and vanilla extract then pour over the pears and drizzle over the maple syrup. Put into the oven on the middle shelf and let the pears cook for about 10 minutes.
  3. Turn and cook for a further 10 minutes, by which time they should be nicely softened. Once they're cooked you may want to spoon off a little of the juice. Set aside and make the crumble.
  4. Put the flour, oats, sugar, butter and cinnamon into a large mixing bowl and using your fingertips rub and mix together until you have a crumble. Now stir in the Superflakes, almonds and hazelnuts.
  5. Sprinkle 50g of the chocolate chips over the cooked pears. Then top with the crumble followed by the rest of the chocolate chips.
  6. Bake in the oven for 15 minutes. Sprinkle over the coconut flakes and return to the oven for another 10 minutes until piping hot.
  7. Serve straight away with vanilla ice cream.
