Ingredients
🫒 Mild olive oil
🧅 Red onion
🫑 Red pepper (capsicum)
🧄 Garlic cloves
🌶️ 6 spicy sausages
🟧 Smoked paprika
🍚 Long‑grain rice
🍷 Dry white wine
🍗 Chicken stock
🌱 Spring onions
🍅 Fresh tomatoes
🌿 Flat‑leaf parsley
Equipment
A wide, heavy‑based casserole dish or deep frying pan works best for this recipe. The extra surface area helps the sausage brown properly and ensures the rice cooks evenly as it absorbs the stock.
I use a shallow cast‑iron casserole because it retains heat well and keeps everything cooking at a steady simmer.
Flavour Profile
This dish builds its flavour from the sausage itself. As the meat browns, it releases oils that coat the vegetables and rice, creating a rich base with gentle heat from the smoked paprika. The tomatoes and spring onions added at the end keep everything bright and fresh.
Choosing the Right Rice
Long‑grain rice works best here because it stays separate and absorbs the stock evenly. Avoid basmati or jasmine, which cook too quickly and can become soft in this style of one‑pan dish.

Buying Spicy Sausages
You can use any spicy sausages you enjoy. A firmer sausage with good seasoning works particularly well, as it browns nicely and adds plenty of flavour to the rice.

The recipe calls for five sausages, but using all six is absolutely fine.
Method
Heat the oil in a large pan and gently cook the onion and pepper until softened.
Add the garlic and cook for another minute. Stir in the sliced sausages and smoked paprika, cooking until the sausage begins to brown.
Add the rice and stir well so it becomes coated in the oils and spices. Pour in the wine and let it bubble for a minute.
Add the stock, bring to a simmer, then cover and cook until the rice is tender.
Stir through the tomatoes, spring onions and parsley before serving.
Final stir and serve.
Freezing
This dish freezes well. Allow it to cool completely, then portion into airtight containers. Defrost in the fridge and reheat thoroughly until piping hot.

Spicy Sausage and Rice (One‑Pan Recipe)

Ingredients
- 1 tbsp mild olive oil
- 1 red onion
- 1 red bell pepper (capsicum)
- 2 garlic cloves
- 6 spiced sausages
- 1 heaped tsp smoked paprika
- 200g long‑grain rice
- 90ml dry white wine
- 500ml chicken stock
- 4 spring onions
- 2 tomatoes
- Small bunch flat‑leaf parsley
- Sea salt
Instructions
- Thinly slice the onion, chop the red pepper, and finely slice the garlic.
- Heat the olive oil in a heavy‑based casserole dish or large frying pan. Add the sliced onion and cook for 5 minutes until soft but not coloured.
- Add the chopped red pepper and sliced garlic. Cook for 2 minutes, stirring occasionally to prevent the garlic from burning.
- Remove the sausage casings and break the meat into small, meatball‑sized pieces. Increase the heat to high and cook for 4–5 minutes until nicely browned.
- Mix in the smoked paprika, then toss in the rice and stir until it’s evenly coated.
- Pour in the white wine to deglaze the pan, scraping up any browned bits from the bottom.
- Add the chicken stock, bring to a boil, then reduce to a gentle simmer. Leave the pan uncovered.
- Cook for 15–20 minutes, stirring occasionally, until the rice is tender and the liquid is almost absorbed.
- Slice the spring onions, dice the tomatoes, and roughly chop the parsley. Stir the spring onions and tomatoes into the rice, letting it cook for about a minute.
- Season to taste with sea salt, sprinkle over the chopped parsley, and serve immediately.
Notes
• Don’t let the garlic brown as it can turn bitter • Heating the smoked paprika briefly helps release its flavour • Long‑grain rice works best; avoid basmati or jasmine • If your sausages are very spicy, reduce or omit any extra chilli • Use a heavy‑based casserole dish to help the sausage brown properly • Turn the heat up when adding the sausage so it browns instead of steaming • Taste before seasoning as the sausages and stock may already add enough salt
I've really fallen in love with this recipe ever since I saw it on the telly! Unfortunately, I haven't had the chance to make it yet mostly because I live in India where we don't get such variety in sausage meat (but I can buy from good frozen ones online). I also don't have access to white wine. Could you give me an alternative to that, if any?
ReplyDeleteInstead of whitewine I use wine vinegar or applejuice from time to time. Just mix it with stock or water according to your taste.

ReplyDeleteYou could leave the wine out altogether and I'm sure it wouldn't be noticed.
If you can get sausage meat online just mix it with some chilli powder or other spice that you like before adding it to the dish as per the recipe.

DeleteI don't know as I didn't have this problem. I used Uncle Bens long grain rice and didn't have a problem. Perhaps it's the rice you are using?
Take a look at the rice you have and try to determine whether it's new crop or old crop. Old crop tends to cook drier than new crop no matter what, which makes them great for things like fried rice. Kernels from new crop takes on water better and makes for fluffier, softer rice. Hope this helps!
DeleteSteelCityCanada: leave the pot simmering for Thebes full twenty minutes. If u already did that, add and additional 1/8-1/4 cup stock in and simmer for 22-23 minutes. The rice should be tender by then. The recipe leaves the rice al dente.

DeleteI'm thinking red wine will discolour the rice. Perhaps a little (just a tablespoon) of white wine vinegar to deglaze; it will cook out and disappear anyway.

DeleteJust add the uncooked rice into the pan and it will cook in the stock you added (after deglazing the pan with the wine) it may take 15 or 20 minutes until it's absorbed the stock and is cooked.

Hi Jan, do you wash the rice before pouring in? I'm trying to find long-grain rice in my area to make this but the ones I've found are too expensive so I'm thinking of using ordinary white rice.
DeleteHi Unknown - I would, if you can't get Uncle Bens then rinse the rice before using (I'm pretty sure with Uncle Bens you don't have to.

Although I haven't tried these myself, I've found Linda McCartney's 6 Vegetarian Chorizo & Pepper Sausages, available in Tesco, Waitrose, Ocado, Sainsbury's and Asda. So pretty much every supermarket in the UK. That said I'm not sure if you are in the UK? Hope this helps!

ReplyDeleteHi Unknown, no risotto rice wouldn't really work.
DeleteWhy? Because risotto rice takes a lot of time to cook through. Plus in order to cook it you have to add HOT stock a little at a time until it evaperotes before adding a little more and the repeating.
So it really wouldn't work with this recipe.

ReplyDeleteHi Unknown, I really do not know why you had to add a lot more stock. Did you use brown rice perhaps (brown rice takes a lot longer to cook than white).

ReplyDeleteThis recipe works really well in a pressure cooker as well, after sautéing everything, cook it on high for 3 minutes, and release the pressure after 10 minutes. I've made it on the stovetop before too, but the rice is always still slightly hard so I prefer the pressure cooker method.
