Feta Pistachios and Leaves with Balsamic and Honey Dressing

Don't you just LOVE Feta?! Next to Extra Matured Cheddar it has to be my favourite cheese.  This is so simple to make; just crumble feta and add pistachios along with some baby salad leaves and drizzle with a balsamic and honey dressing. That's it - job done.

I came up with this yesterday while I was drying my hair (as you do) and yes I do have food on my brain all day long!
The dressing is so simple to make, just taste as you go and add a little more honey or balsamic as you fancy it needs.


To make the honey and balsamic dressing:
2 tablespoons of extra virgin olive oil
1/2 a tablespoon of balsamic vinegar
a small squirt of clear runny honey
just a tiny amount of white wine vinegar, I mean a tiny amount, probably just 1/4 teaspoon
freshly ground black pepper to taste

Mix the lot together and toss your salad leaves immediately before serving.  Don't do it in advance or the salad wont be nice - just oily.
