Mixed Berry Crumble Recipe

A British crumble is one of the simplest desserts to make. It's quick and effortless, making it ideal when you're busy.

Adding oats takes this easy crumble recipe to a new level.

Soft mixed berries and a buttery oat topping, this recipe is proof that you don’t need fresh fruit to make a cracking crumble.

Tips to keep the cost down

Using frozen mixed berries, which are cheaper than fresh berries.

Granulated (table) sugar is a great option as it's roughly half the price of caster sugar, while soft brown sugar tends to be the priciest choice.

I like using both types of sugar, but you can easily swap out all the sugars in the recipe for granulated sugar and still have a delicious mixed berry crumble. How do I know this? Because I used to do it before I got fancy 😆 and it always worked out just fine.

Recipe top tips

  • You can swap the mixed berries for any other berries you already have in the freezer or prefer to use.
  • Cornflour is only needed if using frozen berries, as they produce more liquid than fresh ones.
  • If you're out of cornflour, simply drain most (but not all) of the liquid from the berries and leave out the cornflour. 
  • If you're in a rush, place the frozen berries in a large bowl and microwave them at 800W (not on full whack) for about 8 minutes until defrosted.
  • Don't add the berries without defrosting, or the crumble will burn before the fruit is hot.
  • Porridge oats can be replaced with chopped nuts, such as walnuts, almonds or pecans.

  • porridge oats
  • plain (all-purpose) white flour
  • soft brown sugar
  • caster sugar
  • unsalted butter 
  • extra caster sugar for sprinkling
  • cinnamon
For the crumble filling
  • mixed berries - defrosted
  • cornflour (cornstarch)
  • caster sugar

You can make the crumble in advance and even store it in the freezer. Once prepared (takes 5 minutes), simply place it in a food freezer bag and defrost when ready to use.

To serve

Serve with vanilla ice cream (I love the contrast of hot and cold), custard (delicious), or double cream (my least favourite).

Mixed Berry Crumble

Delicious with custard, vanilla ice cream or cream.

Ingredients

Crumble topping
  • 50g porridge oats
  • 200g plain (all-purpose) white flour
  • 50g soft brown sugar
  • 50g caster sugar
  • 100g unsalted butter - room temperature and cut into cubes
  • plus a little extra caster sugar for sprinkling
  • a sprinkling of cinnamon
Crumble filling
  • 800g mixed berries - defrosted from frozen
  • 2 tablespoons cornflour (cornstarch)
  • 3 tablespoons of caster (fine) sugar

Instructions

Preheat your oven 180°C/350°F
  1. Start by toasting the oats in a large frying pan until just starting to colour. Remove and set aside to cool completely.
  2. Put the flour and sugar in a large bowl and mix well. Add a few cubes of butter at a time, rub into the flour mixture.
  3. Gently rub the mixture between your fingers, similar to counting banknotes, until it takes on a breadcrumb-like texture. Be careful not to overdo it, or the butter will melt into the flour, leaving your crumble soggy.
  4. Place the thawed fruits in a dish and sprinkle them with sugar. Gently mix, being careful not to crush the fruit.
  5. Evenly sprinkle the crumble mixture on top and top with the toasted oats. Add a scattering of caster sugar and a sprinkling of cinnamon.
  6. Bake for about 40 minutes until the crumble is nicely browned and bubbling. Leave to cool for 5 minutes and then serve with ice cream or custard.

Notes

You'll need a 1.4-litre ovenproof dish approx W31 x D19 x H7cm

To find out the size of any dish, fill it with water using a measuring jug - however many litres it takes to fill it up, that's the size of your dish!
