Best Tabbouleh Recipe

Of course, the main ingredient of tabbouleh (or also spelt tabouli) is a super fresh herb and bulgur salad is bulgur wheat.

It's a good source of fibre that can help maintain a healthy digestive system.

Tabbouleh Recipe

A great alternative to rice and is used to make tabbouleh which is a lovely side dish for many dishes.

The even better news is it is tabbouleh is really easy to make. Mint is usually a key ingredient in tabbouleh but I can't say I'm a fan (unless it's chocolate chip and mint ice cream) of course!

So, although I didn't put mint in my tabbouleh, of course, you can add as much or as little as you fancy, just use the leaves only, chop and stir in.

What is Tabbouleh?

Tabbouleh is a Levantine vegetarian salad made from bulgur wheat or sometimes couscous with onion, tomatoes, parsley and mint with olive oil and lemon juice. Variations use shredded lettuce and pomegranate seeds instead of tomato.

In the Middle East, particularly Syria, Lebanon, Palestine, Israel, Jordan, Egypt, and Iraq, it is usually served as part of a meze.

Bulger Wheat - Good Source of Fibre

Tabbouleh is so good for you too because bulgur wheat is a good source of fibre that can help maintain a healthy digestive system. You can buy bulger wheat in any good supermarket or over on Amazon.

Nice and healthy, just like Quinoa is, although I'm not usually a big fan of it I did once make Quinoa with Roasted Butternut which was totally delicious.

Ingredients for Tabbouleh include bulgur wheat, ripe tomatoes, spring and red onions, cucumber and parsley and also mint; which is more traditional.

Other ingredients used are cinnamon, allspice, black pepper and salt, lemon juice and extra virgin olive oil.

What to Serve with Tabbouleh

Tabbouleh is a great alternative to rice and makes a lovely and healthy side dish for many things, we especially like it with salmon.

Tabbouleh is a bright addition to the dinner table with Kofta Kebabs and can also be included as part of meze along with other small plates such as Falafel; Turkish fried eggplant; and Spicy Middle Eastern Potatoes.

Top Tips!

If you make this in advance don't add the parsley or mint until you're about to serve otherwise it will discolour and look horrid. 

The lemon juice really brings out the flavours so don't forget to add it!

Tabbouleh Salad

Tabbouleh Salad

Serves 2 greedy people like us, or 4 not so greedy.
Prep time: 5 Mininactive time: 30 MinTotal time: 35 Min

Ingredients

  • 100g Bulgar wheat
  • 2 medium firm but ripe tomatoes - diced into small cubes
  • 2 spring onions - thinly sliced
  • 1 small red onion - diced into small cubes
  • 4 inches of cucumber - peeled and deseeded then diced into small cubes
  • a good handful flat-leaf parsley - leaves only, washed and dried
  • a pinch of ground cinnamon
  • a very slightly bigger pinch ground allspice
  • a pinch of ground black pepper
  • salt to taste
  • juice of half a lemon, or to taste
  • 2 tablespoons extra virgin olive oil

Instructions

  1. Rinse the bulgur wheat in a sieve until the water runs clear. Drain well, then transfer to a bowl. 
  2. Pour over 400ml boiling water, cover with cling film and leave to soak for 30 mins or so while you prepare the rest of the ingredients.
  3. Once it's soft (have a taste to check) and then, drain any excess liquid if there is any.
  4. Add the diced tomatoes, spring onion, red onion, cucumber and parsley. 
  5. *If you don't plan to serve this immediately don't add the parsley until you are ready as it will turn black.
  6. Add the cinnamon, allspice and pepper, lemon juice and olive oil.
  7. Mix well and add salt to taste and serve immediately.
