Oozing with cheese, these quesadillas are the best, a quick and easy dinner idea that's going to be a big hit with just about everyone.

There are many fillings for quesadillas but I love to use leftover Chilli con Carne.

Obviously, if you're making these for kids you may want to leave out the jalapeño peppers. 😉

Always make enough Chilli con Carne so you have leftovers. There are so many dinners you can make out of it and quesadillas are one of them.

Ingredients

  • Leftover Chilli con Carne - reheated
  • Grated Cheddar cheese - enough to cover each tortilla

Serving ideas 

    • Jalapeño peppers from a jar - drained
    • Tomatoes
    • Red onion
    • Lettuce
    • Grated cheese
    • Sour cream

    What are quesadillas?

    A quesadilla is a Mexican dish consisting of a tortilla filled with cheese and sometimes meat, spices and other fillings. They're usually cooked on a griddle or in a large frying pan on the stove.

    You can use cooked chicken in your quesadillas as filling but cheese is always a must!

    'kay-suh-dee-yah'

    Before you start cooking!

    You will need to reheat your leftover Chilli con Carne in a saucepan. Grate some cheese into a bowl so you're ready when you want to start cooking.

    How do you keep quesadillas crispy?

    Heat up a frying pan and, using kitchen paper just wipe the pan with a little oil.

    'Little' is the keyword here or your tortillas will soak up the oil and be soggy. You must also have a good non-stick frying pan to avoid a quesadilla mess!

    Once the pan is nice and hot, lay a flour tortilla on the bottom and sprinkle with grated cheese - leaving a little strip around the edge without the cheese.

    Cook over a medium to high heat until the cheese has completely melted.

    Then spread just one side of the tortilla with the heated chilli.

    Fold the tortilla over so you have a half-moon shape. Cook for a minute or so more (don't let it burn) and then pop it onto a plate and cut it in half.

    How do you keep quesadillas hot?

    If you're feeding a few people you can keep the quesadillas warm in the oven on a baking tray at 150°C/300°F or Gas 2 until ready to serve.

    With that said, it's probably best you don't try to make too many as they will not be as nice as when they were first cooked.

    • 2 x soft tortillas - I used Old El Paso (brand) corn and wheat
    • Grated Cheddar cheese - enough to cover each tortilla
    Serving ideas - optional
    • Jalapeño peppers from a jar - drained
    • Tomatoes
    • Red onion
    • Lettuce
    • Grated cheese
    • Sour cream

    Instructions

    1. Reheat the leftover chilli in a saucepan.
    2. Heat up a frying pan and, using kitchen paper just wipe the pan with a tiny amount of oil.
    3. Once the pan is nice and hot, lay a flour tortilla on the bottom and sprinkle with grated cheese - leaving a little strip around the edge without the cheese.
    4. Cook the tortilla over a medium to high heat until the cheese has completely melted. Then spread just one side of the tortilla with the heated chilli.
