Simple quick and easy recipe ideas for the awful times, we're all going through at the moment.

Here are a few ideas of what you can do with basic ingredients that you hopefully already have, or are still able to buy.

SPAM and Baked Bean Hash

But if you can possibly get hold of baked beans, and a tin of spam then you might like this SPAM and Baked Bean Hash; the picture above. You can find the recipe by clicking on the link; you can substitute the SPAM for corned beef.

These are just ideas; you can adapt to suit your taste or to the ingredients you can get. At the time of writing, you can still get potatoes and cheese depending on where you shop.

Baked beans are a little harder to get it seems but have a look, you may have a tin in the back of your cupboard.😉

Cheesy Potatoes:
• Cook and mash potatoes with a little milk and butter, season if you didn't add salt to the cooking water, then stir in (or top) with cheese.
• Pop the cheesy mash into a baking dish in the oven 200c /400f or Gas 6 for say 20 minutes or until piping hot.
• If you have or can get; serve with baked beans or tinned spaghetti in tomato sauce.

Corned Beef Hash with Baked Beans:
• Wash and cut potatoes into chunks (no need to peel) and boil in slightly salted water until cooked through. Drain and leave in the saucepan to dry out a little.
• Fry thinly sliced onions until they’re nice and soft, but not browned. Once done put them into a baking dish and tip in the potatoes.
• Chop the corned beef (or any tinned ham) into bite-sized chunks and carefully mix it into the potatoes and onions. Top with grated cheese and cover with foil.
• Then into the oven and cook for 20 minutes 200c /400f or Gas 6
• Remove the foil and pop back in for 5 minutes more so the cheese is nice and bubbling.
• Serve with a tin of beans, and or, top with a fried egg.

Potatoes with Anything Leftover!
• Wash and cut potatoes into chunks (no need to peel) and boil in slightly salted water until cooked through. Drain and leave in the saucepan to dry out a little.
• In a large frying pan, add a little oil along with whatever you have (within reason). For example; onions, peppers, tomatoes, bacon or pieces of sausage or chorizo.
• Add a little seasoning such a little taco mix from a packet or paprika, oregano. You can add a few chilli flakes if you like things spicy.
• Continue to cook while stirring, so nothing burns, and then throw in the potatoes and stir until piping hot. You could add a handful of spinach which will wilt in next to no time. Serve while it's all nice and hot.

If you do have a tin of SPAM then SPAM Fritatta is a good recipe. Actually, it doesn't have to be spam you can use any regular tinned ham
