Warburtons have asked me, along with six other bloggers to take part in their Sandwich Recipe Challenge, where each blogger has to create their Ultimate Sandwich.
Chicken Club Sandwich with Mango Salsa
For me a proper sandwich has to be something with a little heat to it, so off to the supermarket, I went to buy ingredients for my ultimate sandwich.
Traditionally toasted bread is used to make a club sandwich but as I used Warburtons Thins I decided toasting wasn't the way to go.
But as they're so thin, knowing me I'd probably end up burning them to a crisp which is never going to be a good thing!
We're already fans of Warburtons bread anyway and we both love Warburtons Thins. I chose the Seeded ones to make my sandwich but 'Thins' are available in several varieties which do make it hard to choose.
For this recipe you can, of course, can use whichever flavoured cooked and sliced chicken takes your fancy (or even plain chicken) but for extra heat, I used Piri Piri.

Fiery Chicken Club Sandwich with Mango Salsa
Ingredients
- 1 x Warburtons Thins
- 160g pack of Ready Cooked and Sliced Chicken - I used Piri Piri flavour
- 1/4 of a nice ripe mango - stone removed, peeled and diced
- 1/4 red bell pepper - deseeded and diced
- 1/4 green bell pepper - deseeded and diced
- 1 spring onion - thinly sliced
- 2 cm of red chilli - deseeded and finely chopped
- 1/2 a teaspoon fish sauce (Nam Pla - available in any good supermarket)
- 1/2 a lime - zest and juice
- 2 teaspoons caster sugar
Instructions
- Mix the fish sauce, lime juice and zest, together with the caster sugar.
- Add all of the prepared and diced ingredients and mix well to coat.
- You will need 1 and a half Warburtons Thins per Club Sandwich:
- Assemble your sandwich using your favourite Warburtons Thins (I used Seeded).
- Add a layer of chicken slices to one half of a Thin and top with salsa
- Add another half of Warburtons Thins topped with chicken and salsa. Finish by adding the remaining Thin.
I am a huge fan of all things Warbutons and this sandwich - oh this sandwich. It just rocks.

ReplyDeleteI love sandwich thins... I toast them then load 'em up with tuna mayo or cottage cheese and plenty of salad. I'm really loving the look of your chicken and mango combo here!
ReplyDeleteI love a club sandwich! Great idea to use the sandwich thins - when you've got three layers, you don't want anything too thick!
