Healthy Lasagne Recipe

Healthy Lasagne Recipe

Nice and filling healthy winter lasagne recipe. A great way to eat more veg.

Ingredients

  • 2 tbsp olive oil
  • 1 red onion, peeled, cut into wedges
  • 2 parsnips, peeled
  • 1 sweet potato, peeled
  • 1 courgette
  • 2 carrots, peeled
  • 1 red pepper, finely diced
  • 400 gram canned chopped tomatoes
  • 1 tbsp tomato puree
  • 1 tsp chilli powder
  • 1 tsp oregano or thyme
  • 6 sheets lasagne sheets
For the white sauce
  • 25 grams Flora buttery spread
  • 25 grams plain flour
  • 350 ml skimmed milk
  • 55 grams vegetarian cheddar cheese - grated
  • ½ tsp English mustard
To serve
  • 4 slices of toasted granary bread
  • 40 grams Flora buttery spread
  • 1 clove garlic, crushed
  • 1 tbsp chopped parsley

Instructions

  1. Cut the parsnips, sweet potato, carrot and courgette into chunks and place in a roasting tin along with the onions and pepper.
  2. Drizzle with olive oil and roast in a preheated oven at 190˚C/180˚C Fan/Gas mark 5 for 25 to 30 minutes or until cooked.
  3. When cooked, mix with the tomatoes, tomato purée, chilli powder and herbs.
  4. Assemble the lasagne by placing half the vegetables in an ovenproof dish, cover with three sheets of lasagne and top with half the sauce.
  5. Repeat layers ending with cheese sauce.
  6. Sprinkle with remaining cheese and return to oven for 35 to 40 minutes until golden brown.
How to make Lasagne White Sauce
  1. Meanwhile, prepare the sauce by placing the Flora ProActiv Buttery spread into a saucepan to melt.
  2. Add in the flour and stir together with a wooden spoon. It's important to cook the flour like this for a few minutes otherwise your sauce will taste floury and will not be smooth.
  3. Add in the skimmed milk gradually, constantly stirring over moderate heat. Bring to the boil.
  4. Lower the heat and cook for 5 minutes or so until smooth and thickened.
  5. Add a pinch of salt and half the cheese along with the mustard.
  6. Have a taste and adjust the seasoning.
To Serve
  1. Toast the bread and mix the garlic, Flora ProActiv Buttery spread and chopped parsley.
  2. Spread the mix onto the toasted granary bread.
