This can of course, also be cooked on the BBQ, or you can pop it into the oven as I did yesterday.

You can make this recipe with feta cheese, but this one has nice melty mozzarella in place of the feta.

First up - get yourself one of those nice big BBQ foil trays - a shallow one will work better for tray bakes.

If you're cooking it on the BBQ you will need a good one, nothing too flimsy. There is no real recipe for this - just more or less what takes your fancy but I've done a printable recipe anyway.

Ingredients in this recipe

  • Red and Green bell pepper
  • Red onion
  • Tomato
  • Green or Red Chilli (if you like chilli)
  • Buffalo Mozzarella sliced
  • 2 fat cloves of garlic - finely chopped
  • Sea Salt and Pepper to season
  • a pinch of dried chilli flakes
  • Olive oil for drizzling

Vegetable Tray Bake

Get yourself one of those nice big foil trays. If you're cooking it on the BBQ you will need a good one, nothing too flimsy. There is no real recipe for this - just more or less what takes your fancy.

Ingredients

You need is a handful of each of the following - all thinly sliced.
  • Red and Green bell pepper
  • Red onion
  • Tomato
  • Green or Red Chilli (if you like chilli)
  • Buffalo Mozzarella sliced
You will also need
  • Olive oil for drizzling
  • 2 fat cloves of garlic - minced or very finely chopped
  • Sea Salt and black pepper to season
  • a pinch of dried chilli flakes

Instructions

Preheat your oven to 200°c/400°F or Gas 6
  1. Lightly oil the foil tray then put the sliced peppers, tomatoes, onions and chilli into the tray along with the garlic.
  2. Drizzle with a little olive oil and season well with salt and pepper.
  3. Give it all a mix to coat, adding the chilli flakes and sliced chilli pepper if using.
  4. Cover loosely with kitchen foil and pop into the oven for about 20 to 25 minutes.
  5. Then, remove the foil and cook uncovered for another 10 minutes.
