Cod Traybake - Sheet Pan Dinner 

This cod traybake or sheet pan recipe came about because I needed to use up some potatoes, tomatoes and bacon and felt the need to eat fish for some reason!

All that was missing from my traybake was some fish. So, after a quick trip to the supermarket, it was on with the dinner.

You then just need a baking tray and a frying pan and you're on a roll. One easy meal, sorted. 

You can make this as big or as small a meal as you want. Just use however many potatoes, bacon rashers and as must cod (or other white fish) as you fancy.

Roasted cod will easily fall into flakes when it's cooked. Sprinkle over the chopped parsley and serve immediately with some nice fresh crusty buttered bread.

Cod Traybake with Potatoes

Cod Traybake with Potatoes

Make this for however many you like, just add more of everything!

Ingredients

  • 4 large potatoes - get a variety suitable for roasting such as Maris Piper or King Edwards
  • 4 rashers of streaky bacon - or pancetta
  • 2 onions - peeled and thinly sliced
  • a nice bit of cod about 350g - sliced. I used cod loin so there's no skin or bones to contend with
  • a handful of baby plum tomatoes - or whatever tomatoes you have - sliced
  • a small handful of fresh parsley leaves only - chopped
  • olive oil for drizzling
  • a small knob of butter
  • a little salt and black pepper

Instructions

Preheat your oven to 220°C/425°F or Gas 7
  1. Get yourself a frying pan and heat it up. If you have a good non-stick pan and are using streaky bacon or pancetta you really shouldn't need to use any oil at all.
  2. When the pan is hot put in the streaky bacon to fry in its own fat. Cook until it's getting on for nearly - remember it will go in the oven later and will crisp up nicely then.
  3. When it's cooked, removed and set aside, but don't wash the pan!
  4. In that same pan, add a small knob of butter to the oil that's come from the bacon.
  5. Throw in the sliced onions and cook over medium heat until they're soft but not coloured.
  6. Once done, remove and set aside. You've now finished with the frying pan so you can wash it up!
  7. There's no need to peel the potatoes. Just cut them into a suitable size and put them in a large saucepan of lightly salted water.
  8. Bring to the boil and then turn down to a simmer. Cover with a lid and leave for about 5 minutes.
  9. Now you can use the lid to drain the water from them. Put the pan back on the stovetop, lid removed and with the heat off - to dry them out a bit.
  10. Get your baking tray - find one that's a suitable size for the amount of food you're making.
  11. Tip in the potatoes and drizzle with a little olive oil.
  12. Pop them into your preheated oven to roast for about 30 minutes. Remove the tray from the oven and tip in the cooked onions.
  13. Give it a stir and throw in the tomatoes and grind over some black pepper.
  14. Put the sliced cod on top of the potatoes and sprinkle each bit of fish with a tiny bit of salt.
  15. Put the almost cooked bacon in as well and pop it back into the oven to cook for about 15 minutes.
  16. The cod will easily fall into flakes when it's cooked.
  17. Sprinkle over the chopped parsley and serve immediately with some nice fresh crusty buttered bread.

  5. "Getting on for nearly" - made me laugh, as it's what I say and I've never heard anyone else do so too! I love this meal, as roasted is one of the few forms of potato that hubby will eat - and we appear to have a humungous pile of them leftover from Christmas. Also, both hubby & son love fish. :) I think I might serve it with something green, instead of the bread, as it's a bit of a carbohydrate fest, otherwise!
