I've seen recipes for Beetroot and Halloumi cheese before. Anyway, there's no real recipe it's so simple.
All I did was cook the beetroot until tender.
Then I made a marinade consisting of a little oil, white wine vinegar, some sweet chilli sauce and a little bit of sugar. Leave it for a few hours but overnight would be better.
If I say so myself it turned out rather nice. I just used a griddle pan to cook the cheese and the beetroot.
I love beetroot and halloumi. Great meal.

Halloumi, Turkish round fresh baked bread, green olives, tomatoes and you have the making of a great breakfast.
It sure looks good. It would make a nice side dish.
