How to Make Oven Cooked Pancakes - Make Pancake Day a Doddle

Whoop whoop - Pancake Day is nearly here (it's Tuesday 28th February this year) so not long now! Pretty much everyone loves a pancake, even me; but Paul (the husband) is a proper lover of a good pancake.

Trouble is I'm not too keen on cooking them since he can eat a LOT of the thin crêpe like ones which means I'm stood over a frying pan for what seems like forever.
No more standing over a frying pan and flipping it over in hope that you don't ruin it.  I say oven cooked pancakes are the way to go!   They're BIG and filling so just one does the trick, even more marvellous in my opinion. 😉

Oven Cooked Pancake with Berries


Simple to make:
It's a sort of sweet Yorkshire pudding batter except you must use self raising flour or it won't puff up. Pour the batter into a pan and watch it puff right up (it gets a bit scary) but it turns a lovely golden brown and then you know it's done.

Once cooked and you open the oven door, it will sink right back down into a random shape which I think gives it a proper homemade (or you could say rustic) look!  Drizzle with maple syrup, top with raspberries and blueberries, eat and enjoy.

Top Tip!
If you're feeding more than one greedy person or a lot of hungry kids you can make a humongous pancake in a roasting tin; as long as it's non-stick and not too deep it'll be fine. That said, don't forget you'd have to double the ingredients listed.

Of course you can top with strawberries and chocolate or bananas and maple syrup; whatever takes your fancy it's up to you.

The Hard Anodised Round Dish I used was 21 cm (8 inches round)

Serves 1- 2 (depending on how greedy you are) No seriously I say this is enough for 2 but the husband disagrees 😋

To make 1 Big Pancake you will need: 
70 g self raising flour
3 eggs - free range of course
120 ml milk
35 g melted butter - left to cool a bit
1 tablespoon sugar
1/4 teaspoon salt
1/4 teaspoon vanilla extract

Topping:
Maple syrup and fresh raspberries and blueberries along with a dusting or icing sugar

Method:
Preheat your oven to 220C 425F or Gas 7
In a large jug or medium sized bowl whisk together the eggs, milk, salt, vanilla extract and sugar.

Now stir in a little over half of the cooled melted butter; if it's hot it will scramble the eggs.

Put the flour into another bowl and add the egg mixture a little at a time stirring until you have a lump free batter.  Take care not to over mix.

In a frying pan (that can go into the oven) or you can use a good non-stick roasting tin add the rest of the butter. Pour in the batter and pop it straight onto the middle shelf of your oven (be sure to preheat the oven first).

Set a timer for 12 minutes then without opening the oven door check that is is puffed and golden.  If not it should only take another couple of minutes.

Remove from the oven, drizzle with maple syrup and top with raspberries and blueberries, or whatever else you fancy.

Of course you can still make my oven cooked puffed pancakes if you're gluten intolerant; just use Gluten Free Flour which can be found in most good supermarkets.

Might try these as it looks very timesaving. But I kind of like the tradition, like my mother, of frying pancake after pancake for everyone, and seconds, eventually getting the last one for myself.

Yum! Now just got to work out how to work a load of chocolate into it somehow :)
Now I would never had thought this possible. They sound and look amazing! Must give it a try as it would make a really quick and easy dessert

Fantastic idea, I'd don't know why I've never thought of this, I seem to stand over a hot pan for about an hour. These seem so much better.
