Crispy Chicken Burger with Cheese and Bacon
Calling all lovers of cheese and bacon, you will love this chicken burger recipe!
Recipe Top Tips!
- Now, as all ovens vary it is almost impossible to give exact cooking times.
- For example, your chicken might be thicker than mine was.
- Or you might have literally just removed it from the fridge - you should always remove any meat, fish or poultry from the fridge at least 20 minutes before cooking. All of these factors will affect the cooking time.
- So, people! I say you should always check the internal temperature to determine if it is cooked and for that reason, I highly recommend you buy a digital kitchen thermometer.
- Personally, I'm a big fan of the Thermapen Professional Thermometer and can not function in the kitchen without it. The internal temperature of cooked chicken should be 75°C but it's best to remove it at 72°C and let it rest for a few minutes.
- Of course, not everyone likes bacon or cheese, no worries, just leave one or both out, you can still enjoy crispy oven fried chicken burgers in all their glory!
- You can buy panko crumbs in any good supermarket, or over on Amazon.
- BBQ sauce - you can, of course, use your favourite shop-bought brand, or you can be all chefy and make your own. Check out my homemade BBQ sauce recipe, and even if I do say so myself it really is the best!
How to Flatten Chicken Fillets
Take one large chicken fillet and slice it horizontally so you now have 2 fillets - to do this, just hold your hand firmly on top of the fillet and using a sharp knife slice the fillet in half.Repeat with the other fillet.
Now, put each fillet between cling film or parchment paper and lightly bash to make them even in thickness.
How to Crumb Chicken
To crumb the chicken, line up 3 bowls and add the following to each bowl.
Bowl 1
100g plain flour
Bowl 2
2 eggs - lightly beatenBowl 3
80g panko breadcrumbs 2 teaspoons sweet paprika a good pinch of salt and black pepper - and mix them all togetherCoat one at a time and first coat with the flour, then the egg and then the crumb mixture.
Press the crumbs into the chicken so they stick.
Serve with the melted cheese, bacon,lettuce, BBQ sauce and fries.

Crispy Chicken Burger
Crispy crumbed chicken burgers with cheese,, bacon and BBQ sauce -
what's not to like?! Remember you only need 2 large chicken fillets
to make 4 burgers.

Ingredients
- 4 slices of ready sliced Cheddar cheese
- 4 rashers (strips) of smoked back bacon
- 4 pre-sliced burger buns
- 2 nice fat chicken fillets - halved lengthways to make four fillets for 4 burgers - see below
To crumb the chicken - line up 3 bowls and add the following
- Bowl 1
- 100g plain flour
- Bowl 2
- 2 eggs - lightly beaten
- Bowl 3
- 80g panko breadcrumbs
- 2 teaspoons sweet paprika
- a good pinch of salt and black pepper
To serve
- Iceberg lettuce - shredded
- BBQ sauce
Instructions
Prepare the chicken
- Take one large chicken fillet and slice it horizontally so you now have 2 fillets - just hold your hand firmly on top of the fillet and using a sharp knife slice the fillet in half.
- Put each fillet between cling film or parchment paper and lightly bash to make them even in thickness.
Crumb the chicken
- Coat one at a time and first coat with the flour and then the egg, followed by the crumb mixture.
- Press the crumbs into the chicken so they stick.
Preheat your oven 220°C/430°F
- Remember it's always important to preheat your oven first.
- While that's happening, cook the bacon in a frying pan until it's nice and crispy, then remove it from the pan. Wrap in foil to keep warm and set aside.
- Now cook the chicken - drizzle a shallow non-stick baking tray with a little olive oil.
- Put each piece of chicken onto the tray and drizzle the top of each fillet with a little oil.
- Pop the crumbed chicken into the oven (middle shelf) to cook for about 15 minutes, then remove from the oven and add the cheese to the top of each piece of chicken.
- Return to the oven for a further 5 minutes - until the chicken is fully cooked and by which time the cheese will have melted
- If you want, you can undo the foil on the bacon and pop it into the oven for the last couple of minutes of the chicken cooking, to heat it up.
- Remember, the chicken is quite thin so it won't take too long to cook.
To serve
- Put the lettuce onto each half of the burger buns.
- Add the cheesy chicken, top with the bacon and drizzle over the BBQ sauce. Put the tops onto the burgers and serve right away.
