Sometimes you just want a simple and easy dessert recipe. Schwartz has a great range of marinades to liven up BBQ food.

Or of course, as the Great British weather can not be relied upon, any BBQ-style indoor meal.

BBQ Dessert Idea

For this recipe, I used Mojito Lime Marinade packet mix consisting of delicious dried spices; all you need to do is add a couple of ingredients as listed on the back of each pack, then simply mix together to use.

Grill Mates are really are easy to prepare and although they're kind of meant to be a marinade for meat and poultry, I came up with the idea of using the MojitoLime Grill Mates to marinate slices of fresh pineapple.

You can buy Grill Mates in any good supermarket or over at Amazon via the link above.

This dessert is so easy to make; just marinate the pineapple slices before popping them onto the BBQ or you can use a griddle pan indoors on the stovetop.

I didn't follow the back of the packet - instead I altered the 'extra' ingredients needed to suit my BBQ Mojito Pineapple creation!

What to Serve with BBQ Pineapple

BBQ Pineapple

Quick and easy grilled pineapple dessert, perfect at a BBQ.

Ingredients

  • 1 large fresh pineapple - cored, peeled and cut into thickish slices
  • 1 packet of Schwartz Grill Mates Mojito Lime
  • 1 tablespoon olive oil
  • 50ml dark rum
  • 2 tablespoons of molasses

Instructions

  1. In a small bowl mix together the whole packet of Schwartz Mojito Lime 'Grill Mates' along with the olive oil, dark rum and molasses and mix well.
  2. Put the sliced pineapple onto a plate and pour over the marinade, turning the pineapple to coat. 
  3. Leave to marinate for 10 minutes then turn and leave for a further 10 minutes. Be sure to keep the marinade to baste during cooking.
  4. Pop the pineapple slices onto a really hot griddle pan (or BBQ) and cook for a couple of minutes or so.
  5. Baste and turn to get those nice grill marks, cook for another minute before serving with some nice vanilla ice cream.
