Goat cheese sandwich idea with roasted tomatoes on ciabatta is perfect for lunch, brunch or a cheeky snack.

This yummy ciabatta is just the very thing, and the best bit is it's ready to eat in under 10 minutes. Although I did already have some roasted tomatoes.

I used British piccolo tomatoes although of course, you can use any baby tomatoes.

But with that said the sweetness of these Piccola tomatoes I can't begin to describe; absolutely the best tasting tomatoes, seriously.

A couple of weeks back to celebrate British Tomato Fortnight with the British Tomato Growers Association I was lucky enough to be sent a lot of lovely tomatoes.

Honestly, I had that many tomatoes, at first I didn't know what I was going to do with them all. But of course, apart from enjoying them in salads, etc I also served some with sliced and Halloumi with Honey and Sweet Pepper Flakes

I then roasted some in a low oven to make pasta sauce for the freezer. But once they emerged from the oven I couldn't resist popping a few into a toasted ciabatta 😋

How to Roast Tomatoes

So simple yet so delicious. I drizzled the tomatoes with a tiny bit of olive oil threw in a few garlic cloves (in their skin).

Slow-roasted them for about an hour on really low heat; 150C/300F or Gas 2 check on them in the last 15 minutes since the last thing you want is for them to burn.

Ciabatta, goat's cheese and a few of these gorgeous roasted tomatoes is all you need; it's amazing how just a few ingredients can make such an easy lunch.

Ingredients in this Recipe 

  • Olive oil for drizzling
  • 2 x Ciabatta rolls - sliced
  • 125g soft goats cheese
  • a few roasted tomatoes
  • a few freshly snipped chives

Method

Heat up a grill pan till it's nice and hot. Drizzle each slice of ciabatta (on the inside part, not the crust) and lay them oil side down and leave for a minute or so by which time they will be nicely toasted.

Remove the ciabatta and leave it to cool for a minute. Spread generously with goats cheese and top with a few roasted tomatoes and some freshly snipped chives.

That's it, job done!

Goat Cheese Sandwich

I was making pasta sauce so I pinched a few tomatoes to make this. But of course, if you're not making pasta sauce you could always drizzle a few tomatoes with a tiny amount of olive oil and heat in a frying pan to speed things up.

Ingredients

  • Olive oil for drizzling
