Just recently I was asked if I'd like to choose a recipe from HelloFresh and have a go at making it myself.

Usually, HelloFresh delivers recipe boxes straight to your door, but due to the current situation they are a lot busier than usual and so it was easier for me to go out and buy the ingredients myself.

A recipe box contains all of the ingredients required to make each recipe. The ingredients are measured out for you, so all you have to do is follow the step-by-step instructions with photos of each step.

As we all know, when food waste goes to landfill, it impacts the climate by producing greenhouse gases.

How does it work?

Each week you choose from a menu of around 21 simple recipes that have all been tried and tested. They're all easy to follow, and some recipes can be made in 20 minutes which is absolutely perfect for busy families.

You can choose boxes for 2, 3 or 4 people and decide how many recipes you want each week.

Mexican-style Beef with Crispy Potato Top

Preheat your oven to 200C/400F or Gas 6

Chop the potatoes into cubes, (no need to peel)! Drizzle with a little oil, then season with salt and pepper.

Toss to coat, then spread out in a single layer and roast on the middle shelf of your oven until golden, 25-30, turning halfway through cooking.

Meanwhile, halve, peel and chop the onion into small pieces. Halve the pepper, discard the core and seeds then chop into 2cm chunks.

Start the sauce

Heat a splash of oil in a frying pan on medium-high heat. Add the beef mince and cook until browned, 4-5 minutes, breaking it up with a wooden spoon as it cooks.

Add the pepper and onion to the beef, stir together and cook until all the veggies are softened, 5-7 minutes.

Add a pinch of pepper. Don't add salt until the end of cooking when you can have a taste, you might find you don't need it.

While the veg cooks, remove the ends from the carrot, coarsely grate (no need to peel) and add to the pan.

Brown the beef mince and add the vegetables

Simmer

Stir the central American spice mix into the beef ad cook for 1 minute. Pour in the chopped tomatoes and 50ml of water.

Stir in the beef stock powder and bring to a boil then reduce the heat to medium. I used a Knorr beef stock pot since I wasn't sent the recipe box and couldn't actually buy beef stock powder and gravy powder isn't the same.

Allow to simmer and thicken until there is almost no liquid left, about 15 minutes.

Now chop the coriander and set aside. Grate the cheese.

Make the Guacamole

Chop coriander stalks and all. Slice lengthways into the avocado. Once you reach the stone turn the avocado around to cut it in half.

Twist each half and pull it apart. Remove the stone then scoop out the insides into a bowl with a little fo the chopped coriander.

Halve the lime and add a squeeze of juice and a pinch of salt and pepper. Mash with a fork. Taste and add more salt, pepper and lime juice if required.

Finish and Serve

Once the sauce has thickened, have a taste and salt and pepper if you think it needs it.

Spoon into an ovenproof dish. Top with the roasted potatoes and sprinkle over the cheddar cheese.

Pop it into the oven and bake until the cheese has melted and is nice and golden. Once golden, serve in deep bowls with a dollop of guacamole.

Sprinkle over the rest of the coriander. Enjoy!

Taste test

Oh my goodness, I will be making this again! We love the idea of the crispy potatoes and cheese topping. Usually, I'd have cooked some rice so the potato was a good change from the norm.

  1. This Mexican style beef sounds amazing. Hello Fresh recipes are excellent to use. Everything provided so no rushing to the shops for last minute items. Easy recipes to follow. A large selection of recipes to choose from too. A fantastic idea for busy households or just if you fancy some variety to your meals. My daughter has used Hello Fresh and recommends it 100%.
