Plus I have a simple salad dressing, using a few store cupboard ingredients.

This recipe takes 15 minutes or less to make and is really healthy too.

Beans

Are one of the best sources of dietary fibre and are an affordable source of protein too. Beans keep you feeling fuller for longer so can help in weight loss.

Tuna

Add a tin of tuna in springwater, rather than oil, and you have a quick and easy filling meal.

Any good store cupboard should always have a stock of tinned, or canned food and that way you'll always be able to make something to eat if you can't, for whatever reason, leave the house.

For my Mixed Bean Salad recipe, I used a tin of five bean salad from Napolina.

You might notice from the picture it's in a vinaigrette dressing. But personally, I don't think it has much taste to it, so I like to make my own dressing.

Naplolina Five Bean Salad contains

Red Kidney Beans, Black Eye Beans, Borlotti Beans, Pea Navy Beans, Baby Green Lima Beans and Sweetcorn.

It's all mixed together with vinegar and spices in salted water.

Top Tip!

You will want to drain the beans from the tin anyway, but if you are making my recipe you might want to rinse and drain.
Napolina Five Bean Salad

Now, you might remember my post on How to Cut Down on Plastic Waste and did a review on these absolutely marvellous bowl covers from a company called Smidge.

Once I'd made my salad I wanted to cover it for a little while before eating it. Usually, I'd have reached out straight for the clingfilm; but thanks to these Reusable Silicone Bowl Covers are a cheaper alternative to clingfilm, and considering if like me, you tend to use a lot of the stuff.

They're available to buy over at Smidge and can even be used in the freezer and oven! All you do is place the cover on top of the bowl and that's it.

You'll find (depending on the weight) that you can actually pick the bowl up, so you know it's airtight.

Now, I'm not suggesting you can waltz around the kitchen carrying your bowl around, please don't!

But instead, from a very small height and while the bowl is over the worktop, try it and you'll see what I mean these covers are airtight and I love them.

Can you Freeze Mixed Bean Salad?

I would say once you've added the dressing, most definitely not. Although with that said I have Googled it and some say you can freeze beans.

Personally, I'm not even going to try since I believe it won't be the same once defrosted. But please let me know in the comments below, if you have done this and it worked, I'd be interested to know.

Mixed Bean and Tuna Salad

A simple mixed bean salad recipe with a lovely dressing made from storecupboard ingredients.

Ingredients

For the salad
  • 1 x 185g tuna chunks in spring water - drained well
  • 1 x 400g tin mixed bean salad - rinsed and drained
  • 1 large tomato - diced
  • 2 spring onions (scallions) - finely sliced
  • 10cm (4 inches) cucumber - deseeded and cut into small dice
  • salt to taste *if you are including tuna in your salad, you probably won't' want to add salt.
For the dressing
  • 3 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp sugar
  • pinch of black pepper
  • 2 tsp Dijon mustard

Instructions

  1. Put all the salad ingredients in a bowl and mix well.
  2. Mix the dressing ingredients in a separate bowl or jug until well combined.
  3. Pour the dressing over the salad, season well with and pepper and toss together.
