Chopped Salad with Mixed Beans and Lemon Dressing

Chopped salad will add a healthy and colourful side to many dishes and is great for serving alongside BBQ food or any other outdoor eating event. Or, how about serving with a simple jacket potato? A chopped salad will provide an easy stress free lunch.

Of course you can add whatever you want to your salad - sweet corn, celery, radishes, cooked and diced new potatoes and even leftover cooked chicken. Just add what you want and leave out what you don't!

Chopped Salad with Mixed Beans

Also chopped salads are a great way to (perhaps) get the kids to eat mixed beans and other bits and bobs they might otherwise not want. A dressing of some sort is nice but of course it's up to you.

When serving add the dressing a little at a time (you probably won't want to use all of it) it will keep for the next day in a suitable jar. Stir through the salad and serve.

Chopped Salad with Mixed Beans

Cans of mixed beans can easily be found in any good supermarket. They are of course already cooked and are usually in slightly salted water. Just drain and rinse before serving.

Serve with a nice jacket potato for a nice filling healthy meal.

ingredients:

1 cucumber - seeds removed
2 red bell peppers - seeds removed
3 large tomatoes - seeds removed
2 large carrots - peeled
2 red onions - peeled
1 x 400g can of mixed salad beans - rinsed and well drained

instructions

Chop the salad ingredients into small dice and tip into a large bowl.

Gently mix the lot together and either cover with cling film to serve later or add the dressing and serve immediately. 

Top Tip!  Never dress any salad until you're ready to serve or it will turn horrid and oily.

For the Lemon Dressing - Mix together the following:
6 tablespoons of Extra Virgin olive oil
a pinch of sea salt
a pinch of black pepper
the juice of 1 lemon 

When serving add the dressing a little at a time (you probably won't want to use all of it) it will keep for the next day in a suitable jar.  Stir through the salad and serve.

  1. Chopped salads are brilliant and this one is really attractive. They're perfect for when you're trying to lose weight but don't want to feel deprived as it takes ages to eat!!!!
