Lancashire Hotpot - Best Recipe

Potatoes that are crispy on top and nicely cooked through, soaking up the lovely flavours as they cook mixed with lamb that melts in your mouth.

Based on a Lancashire hotpot James Martin recipe, this is just the thing for this freezing weather and is so good. You can leave the lambs kidneys out if you really don't like them, but they do add to the taste. 

What to Serve with Lancashire Hotpot?

Braised Red Cabbage goes perfectly with hotpot. It's one of those dinners that you can eat again, even though you're full. I did a post on this a good age ago but it's so good it deserves another mention.

If you like Lancashire Hotpot you will most certainly like Lamb with Boulangère Potatoes.

The potatoes really do need to be cut thinly for this or they won't be half as nice and crispy on top at the end of cooking. 

A mandoline slicer really is the best way to cut potatoes thinly enough. Besides making Lancashire hotpot, you'll find it very useful in the kitchen.

Lancashire Hotpot Recipe

Ingredients in Lancashire Hotpot

  • Butter 
  • Boneless lamb steaks
  • Lambs kidneys - leave them out if you don't like them
  • Onions
  • Carrots 
  • Plain flour (all purpose)
  • Worcestershire sauce
  • Hot chicken stock
  • Bay leaf
  • Sea salt and freshly ground black pepper 
  • Potatoes

  1. wow, lancashire hotpot takes me back to school dinners (that is actually a good thing, we had a great chef at school before they changed company and started selling fast food). Once a week he would make hotpot and it was so delicious that i still remember it today!
