Roasted Vegetables with Mozzarella Cheese

Roasted Mediterranean vegetables with delicious oozy melty mozzarella.

Great midweek dinner for using up any leftover veg you might have in the fridge. To make this all I had to buy was the mozzarella.

Roasted Vegetables with Mozzarella

So easy to do and can be prepared ready to cook later the same day - just cover in cling film and pop it into the fridge.

I'd remove it an hour before cooking as the baking tray will be stone cold and it won't cook for ages.

To serve more people, just add more of everything and use a bigger baking tray, simples!

Roasted Vegetables with Mozzarella Cheese

Roasted Vegetables with Mozzarella Cheese

To serve more people just add more of everything and use a bigger roasting tray.

Ingredients:

  • 1 courgette (zucchini) - sliced
  • 1 red onion - thinly sliced
  • half an aubergine (eggplant) - sliced
  • 1 red sweet pointed pepper - sliced into rings and seeds removed
  • 2 cloves of garlic - thinly sliced
  • a few baby plum tomatoes - halved
  • 1 ball of mozzarella - sliced
  • sea salt and freshly ground black pepper
  • a couple of glugs of extra virgin olive oil

Instructions:

  1. Preheat your oven to 200c/400f/gas6
  2. Throw all the vegetables and garlic into a suitably sized baking dish. sprinkle with sea salt and pepper.
  3. Add a couple of glugs of olive oil and mix with your hands so everything is nicely coated with the oil and seasoning.
  4. Top with the sliced mozzarella on top, drizzle with a little more olive oil.
  5. Pop the tray into a preheated oven for about 30 to 40 minutes.
  6. Serve immediately with whatever you fancy.

  6. That looks yummy and I'll be trying it for sure. Some crusty garlic bread and it could be a whole meal even.

    I love that you put the American names for things in your blogs. The first time I visited England I had no idea what a courgette was until I saw one in the market with the name above it. Yes, I can google to find out, but it's so thoughtful of you to put it right out there for us.
