Bubble and Squeak with Bacon and Fried Egg

Bubble and squeak is a traditional English dish made with leftover vegetables from the Sunday Roast.  The main ingredients are potato and cabbage, but you can add whatever you fancy - or have leftover!

So, be making extra potato and veg when you're doing the Sunday roast this week and you have Monday's dinner sorted!
Therefore there is no real recipe, just use up what you have in the fridge.
If you want to make this with bacon, here's how:
Get yourself a large frying pan and fry up some smoked streaky bacon, or whatever bacon you have.
Remove the bacon and cut into pieces with kitchen scissors and set aside.

In the same pan without washing it, the fat in the pan will be enough.  Now throw in your left over mashed (or crushed) potato and cabbage.  Fry it and turn it now and then, add the bacon back in so it heats up.

When your happy it's nice and hot and heated through, in a separate pan, fry and egg and serve immediately.  Job done.
