Sweet Chilli Chicken Burgers with Sweet Potato Chips

These burgers are a perfect change from the normal beef burger.  A nice amount of heat from the sweet chilli sauce and the spring onions giving texture. 
 
  This recipe makes three burgers - an odd amount but there was then one for me and two for Mr Bennett the husband. Don't mince the chicken - just chop it with a knife into small dice. 

For the Sweet Potato Chips - you will need:
a couple of sweet potatoes - peeled and cut into 2cm chips
about 1 tablespoons of vegetable oil
salt and pepper to season
To make 3 burgers - you will need:
400g of skinless chicken breast fillet (that's 2 large or 3 small fillets)
3 spring onions - sliced
a squeeze of lemon juice
1 teaspoon of Shaoxing (Chinese rice wine)
a couple of teaspoons of cornflour
1 teaspoon brown sugar
1 teaspoon Soy sauce
1 tablespoon of hot and sweet chilli sauce (Maggi)
1/2 a teaspoon of sesame oil
1/2 a teaspoon of chilli powder
a little salt and pepper to season
a little vegetable oil
To Serve:
burgers buns with sesame seeds on top, mayonnaise, baby gem lettuce and some chilli sauce for dipping.
How to do it:
Start with the Sweet potato chips. Preheat your oven to 200C/400F or Gas 6
Spread the potato chips into a roasting tin and pour on a little vegetable oil. Mix together with your hands. Season with salt and pepper.
Roast in the oven for about 20-30 minutes, until they're crisp around the edges and nice and tender on the inside.
For the burgers:
Using a knife, dice the chicken fillets into quite small pieces and put them into a bowl. Now add the spring onions, lemon juice, rice wine, cornflour, brown sugar, soy sauce, sweet chilli sauce, sesame oil, chilli powder and seasoning. Give it all a good mix.
Add a little more cornflour if you need to and shape the mixture into three burgers.
I used an electric griddle but you can use a grill pan over a medium heat.
First of all I split the burger buns in half and placed them on the griddle to toast them slightly. Once done remove and set aside.
Fry the chicken burgers for about 5 minutes on each side or until they are cooked through. Spread one half of each bun with mayonnaise, and top with the gem lettuce and sliced tomato.
Now put a chicken burger on each bun half and top with the other half of the bun. Serve with the sweet potato chips. I also served some 'Maggi' chilli sauce for dipping the chips in!

  2. Those are great looking bugers, Jan. I guess not mincing the chicken will stop it going too dry which easily happens with chicken burgers. Great idea.

  5. Great looking burgers Jan! Sweet potato fries are my absolute favorites. I always choose those over french fries if given a choice!
