Homemade Cauliflower Cheese

Perfectly cooked cauliflower in a cheesy, tangy sauce.

Cauliflower Cheese

You really want a strong cheddar cheese for this and don't leave out the Dijon mustard!




Yield: 2-4

Cauliflower Cheese

Serves 2 people;if you happen to be as greedy as we are!

ingredients:

1 good sized cauliflower - cut into florets, rinsed and dried
65g butter
65g of plain flour
450ml whole fat milk
2 good teaspoons of Dijon mustard
150g strong matured cheddar - grated
plus a small pinch of salt and some pepper to taste
a little cayenne pepper to sprinkle on top

Preheat your oven to 200C/400F or Gas 6

Get your cauliflower cooking in plenty of boiling, salted water and partly cover with the saucepan lid. It will take about 12 -15 minutes. Cook until you can easily insert a knife into it so you know it’s cooked. You don’t want mush though so be careful not to over cook.

Drain well and put the cauliflower into a buttered oven-proof dish.

Now get the cheese sauce on the go:
Melt the butter and add the flour and cook for a couple of minutes over a low heat, otherwise the sauce will taste floury.

While still on the heat, whisk in the milk in about 3 goes and bring to the boil.
Remove from the heat and stir in the mustard and two thirds of the cheese into the sauce and season with salt and pepper to your taste.

Pour the cheese sauce on top of the cauliflower, then sprinkle the remaining cheese on top along with a little cayenne pepper - not too much just a sprinkling will do.
Bake in a preheated oven for about 20 - 25 minutes until golden brown and bubbling.
