Fried Spaghetti and Cheese

An idea for left over spaghetti - I'm always making too much. I'm still decorating, so we've had over a week now of strange, made up dinners!  Yesterday lunch time I made a really quick snack of fried spaghetti, egg and cheese.


Whatever, it works. Crispy spaghetti with eggy bits and melty cheese equals triple yum. You can add whatever else you fancy adding - onion or chives perhaps, or use Parmesan cheese instead of cheddar?

How to do it:
Left over spaghetti enough for two people cut into shorter strands with kitchen scissors
3 eggs - lightly beaten
a good amount of grated matured cheddar - or whatever cheese you either have in the fridge or fancy
a good knob of butter - say 25g
a little chili oil - or you could use garlic oil
freshly ground black pepper

Get a large frying pan and add the oil and butter. Once they've melted and are nice and hot add the spaghetti and give it a good stir. Season with pepper and stir for a few minutes more to heat through.
Now add the beaten egg, give it another quick stir then add the grated cheese.

Let it cook for a minute or two - till the egg sets.

The cheese will start to melt on top and the underside of the spaghetti will be nice and crisp and just starting to brown.

Salad leaves onto a plate and your all done.

  2. The crisp pasta thing is always good. This sounds like a great new classic.

    If you're doing a tuna/ pasta/ cheese sauce bake, leave a little exposed pasta/ spaghetti on the top while you bake it and the crispness is delightful.

  3. One of my favorite Chinese dishes is when they take the noodles and fry them up crispy. This sounds equally delicious.

    Although, Italians are usually associated with pasta, it is not one of my favorite meals. (please don't beat me with a wet noodle:) However, for some odd reason, I LOVE fried spaghetti! My very best favorite is simply leftover linguine with garlic and oil. (Spaghetti Aglio e Olio) with grated Pecorino Romano. YUM! I'm liking the addition of the egg in your recipe. As you say, "triple yum."
