BBQ Peppers stuffed with Feta and Ricotta cheese
A great side dish at any good BBQ, quick and simple to make, trust me, everyone will love them. So simple there's no need for a recipe card!

BBQ Cheese Stuffed Peppers
Well I don't want to speak too soon but it seems for a couple of days the UK is having a heatwave; about time too I say.
So yesterday, out came the BBQ! Gotta love BBQ food as it's not only easy but of course delicious too.
How to Cook on a Charcoal Kettle BBQ
The most common mistake when barbequing food is this. It's really important to wait till the coals turn white with heat before attempting to cook anything, otherwise, all that happens is your burgers and sausages burn before they cook inside.
Sometimes it can take a while to get the coals to light if there's a breeze for example. A few years ago we bought a Weber Rapidfire Chimney Starter and I must say it is life-changing; well as far as lighting a BBQ goes anyway!
Seriously it's a brilliant invention, so more messing about trying to get the charcoal to light, this thing is absolutely brilliant and I totally recommended you get one if you haven't already.
You'll find it'll be far easier and quicker to light your next BBQ. No nasty and potentially dangerous lighter fuel; which actually really puts you off eating and I can't think of anything worse.
One of our neighbours insist on using it and when he does we have to go inside because of the strong smell.
You can use either newspaper or natural lighter cubes to get the coals going. Newspaper works great, but nothing beats a natural lighter cube.
It even works in the rain! I prefer to use two lighter cubes at a time to get the coals burning even faster.
Of course, BBQ favourites are always going to be burgers and sausages, but we are big fans of these baby sweet peppers and I can't resist baby vine tomatoes.
Stuffed Peppers Recipe
There's no real recipe for this as it's far too simple.
- Mash equal amounts of feta and ricotta cheese together with a little olive oil
- Cut the peppers in half lengthways (keeping the stalk on) remove the seeds and spoon in the feta/ricotta mixture
- Lay them in a foil cooking tray and sprinkle with dried oregano and a few sweet red pepper flakes
- Drizzle with olive oil and cover with foil
- That's it, you're ready to pop the tray onto the BBQ
How to Cook on a Kettle BBQ
BBQ lid on with the vent open.

BBQ Vine Tomatoes
I use baby ones so they cook quicker; nothing to do but drizzle with olive oil and add a sprinkling of dried oregano and a little sea salt.
The peppers and tomatoes took about 30 minutes to cook. Remove the foil 10 minutes before the end of cooking.
