Easy Banana Bread Recipe

This banana bread or loaf recipe uses oil which keeps it nice and moist.

A great way to use up overripe bananas and you'll find that everyone will come back for seconds.

Who doesn't love banana bread? 😋 The recipe is by an Australian food stylist author and magazine editor, Donna Hay.

Now I'm not really into baking but of course, the Kenwood Chef Elite can be used for so much more than making cakes and bread.

But with that said, since this amazing piece of kit arrived I've become all converted and have made a Christmas cake, a Chocolate cake and two lots of Brownies.

I'm feeling quite pleased with myself; in fact, I'm becoming quite a little baker! 😊

Banana Bread and the Kenwood Chef Elite

There's no doubt about it the Kenwood Chef KVC5100S is a powerful 1200w, a variable-speed mixer which comes with a beater, whisk and dough hook and it certainly makes a lot of things so much easier.

My first impression, once it was out of the box, was what fantastic quality and how well made it is; nice and sturdy and well designed. Check out this lovely-looking machine! 😍

Kenwood Chef Elite

The Kenwood Chef Elite has a large 4.6-litre stainless steel bowl so it can accommodate large batches and there's a splash guard with a chute that makes it easy to add ingredients.

The splash guard isn't shown in my picture as I didn't need it for this recipe due to only using a low-speed setting.

From kneading dough, mixing and whisking and with 20 or so attachments available you can add them, to use for chopping, slicing, dicing, processing, blending, juicing and even grinding spices or coffee beans with the grinding mill.

The planetary mixing action ensures all ingredients are perfectly combined, even in small quantities, so nothing is left unmixed around the edge of the bowl.

I'll show you more about the Continuous Slicer/Grater Attachment and the Dicing Attachment I've invested in later in another post.

Oh yes, I'm so excited about this that I purchased them as a little Christmas present to myself!

Now before this arrived I'd have never bothered to make banana bread because I'm lazy and can't be doing all that mixing by hand but with the Kenwood Chef Elite it's a doddle. 

Just throw the ingredients in and let the machine do the work.

Okay there's not too much in the way of mixing for this particular recipe but what about bread making - done manually bread requires a lot of effort and kneading but the Kenwood Chef does all that hard work for you. Marvellous.

Recipe for banana bread

This recipe is so easy with the Kenwood Chef but you can, of course, mix it in a large bowl.

Now add the flour and cinnamon, and again on low speed, mix to combine.

Remove the bowl and using a wooden spoon carefully fold the mashed banana into the mixture.

Line a 900g loaf tin with greaseproof paper, pour the mixture in, and lay the slices of banana on top, cut side up.

Cook for about 50 minutes or until a skewer comes out clean. Leave it to stand in the tin for 5 minutes before turning it out onto a wire rack to cool completely.

So, all in all, you could say I'm in love with my Kenwood Chef Elite - I've used it pretty much every day to make something or other.

Easy Banana Bread Recipe

This easy to make recipe by Donna Hay is a great way to use up overripe bananas.
Prep time: 10 MinCook time: 50 MinTotal time: 1 Hour

Ingredients

  • 4 large ripe bananas - mashed
  • 1 more banana for decorating - halved lengthways
  • 125ml vegetable oil
  • 3 free-range eggs
  • 265g soft dark brown sugar
  • 1 teaspoon vanilla extract
  • 225g self-raising flour
  • 2 teaspoons ground cinnamon

Instructions

Preheat your oven to 180°C (350°F)
  1. Put the oil, eggs, sugar, and vanilla into the mixing and, using the beater attachment mix on a low speed to combine. Or do this by hand.
  2. Now add the flour and cinnamon, and again on low speed, mix to combine.
  3. Remove the bowl and using a wooden spoon carefully fold the mashed banana into the mixture.
  4. Line a 900g loaf tin with greaseproof paper and pour the mixture in and lay the slices of banana on top, cut side up.
  5. Cook for about 50 minutes or until a skewer comes out clean.
  6. Leave it to stand in the tin for 5 minutes before turning it out onto a wire rack to cool completely.
