Oh my goodness, this is so good!

Ciabatta 

The soft, chewy texture and honeycomb holes make ciabatta especially good for dunking into soup or mopping up the sauce from a dinner plate.

Ciabatta also makes delicious sandwiches or it can be sliced and used as a pizza base.

Now, this came about when I was reading a menu in a bar. I love reading menus, I can't for the life of me read a book of any description unless, of course, it has something to do with food.

I can sit and read cookery books and menus all day long.

Oh and maps, I LOVE reading maps, yes maps! Possibly I could be the next brain of Britain when it comes to knowing where most places are, very bothering I know 😐

Anyway, never mind all that! 

The other week I went out for lunch with some good friends to the Novello Lounge in Southwater Telford. The menu had so many delicious dishes to choose from so we all took a while to decide what to have.

Ingredients

  • olive oil
  • ciabatta rolls
  • good quality tinned tomatoes 
  • roasted red pepper slices from a jar and drained from the oil
  • balsamic vinegar - or a teaspoon of sugar if you don't have balsamic
  • skinless chicken fillets
  • Nando's of hot peri-peri dry rub seasoning, or your favourite brand
  • chorizo 
  • Cheddar cheese
  • a few spinach leaves - for good health!

Recipe Top Tips

You can use either Focaccia or Ciabatta, they both work well.

Nando's Hot Peri Peri seasoning is brilliant, plus they do sell a medium-hot version if that's more your thing. If you can't get the same one I used, just use your favourite brand.

Grilled Chicken Sandwich Recipe

Grilled Chicken Sandwich Recipe

Cheese and chorizo heaven! It's worth getting good quality tinned tomatoes. I use the brand Cirio, they really are the best.
Prep time: 5 MinCook time: 10 MinTotal time: 15 Min

Ingredients

  • olive oil
  • 2 ciabatta rolls - halved
  • 200g tin of good quality tinned tomatoes - half a regular 400g tin drained well from their juice
  • a few roasted red pepper slices in oil (not vinegar) from a jar and drained well
  • a splash of balsamic vinegar - or a teaspoon of sugar if you don't have balsamic
  • 1 or 2 skinless chicken fillets
  • a sachet Nando's of hot peri-peri dry rub seasoning
  • some diced chorizo - skin removed
  • a pinch of sweet smoked paprika
  • a handful of grated Cheddar cheese
  • a few spinach leaves - for good health!

Instructions

  1. Put the sliced chicken into a small bowl and add about half the packet of peri-peri rub. Mix together so coat the chicken well and then make the sauce.
  2. Make the sauce: Drain the tomatoes from their juice and squish between your fingers putting to remove more of the juice and put the tomatoes into a small bowl.
  3. Take a few roasted peppers from a jar and chop them before adding them to the tomatoes.
  4. Add a drizzle of balsamic or sugar to sweeten the sauce and mix it all together and set aside.
  5. Heat up a small frying pan and add the chorizo. Cook for a few minutes until it releases its lovely orange oil. Add a teaspoon of paprika and stir.
  6. Remove the chorizo and set it aside - don't wash the pan!
  7. Using the same frying pan add the chicken, you can add a tiny amount of olive oil if you think you need to. Cook the chicken for a few minutes turning to evenly cook through; it won't take long as it's thinly sliced. Turn the heat off.
  8. Lightly toast the ciabatta halves under a hot grill then wrap the top halves in foil to keep warm.
  9. Spread the pepper sauce over the bottom two halves and add cheese, a few spinach leaves and the chicken and chorizo.
  10. Pop back under the grill until the cheese is bubbling and it's heated through. Put the ciabatta tops back on and dive in.
