The dressing is so simple to make, just taste as you go and add a little more honey or balsamic as you fancy it needs.

Feta, Pistachios and Leaves with a Balsamic and Honey Dressing.
Don't you just LOVE Feta?! Next to Extra Matured Cheddar it has to be my favourite cheese and this is so simple to make.
ingredients:
2 tablespoons of extra virgin olive oil
1/2 a tablespoon of balsamic vinegar
a small squirt of clear runny honey
just a tiny amount of white wine vinegar, I mean a tiny amount, probably just 1/4 teaspoon
freshly ground black pepper to taste
instructions
Mix the lot together and toss your salad leaves immediately before serving. Don't do it in advance or the salad wont be nice - just oily.
