Easy SPAM Frittata
A tasty SPAM frittata with eggs and veggies — quick, easy and perfect any time of day.
Ingredients
- 340g can SPAM chopped pork and ham - cut into 2cm cubes
- 7 large free-range eggs
- 4 tablespoons milk
- a few leftover cooked new potatoes - halved
- 6 baby plum tomatoes - halved
- 4 spring onions (scallions) - finely sliced
- 50g Cheddar cheese - grated
- 1 tablespoon vegetable oil
- ¼ teaspoon smoked paprika
- sea salt and freshly ground black pepper to season
Instructions
- Crack the eggs into a mixing bowl, pour in the milk, season with salt and pepper, and whisk together with a fork.
- Heat a large frying pan and toss in the cubes of SPAM® Chopped Pork and Ham. Add the cooked potatoes and a dash of smoked paprika, frying until everything is golden and lightly browned.
- Add the oil to the hot frying pan, then pour in the egg mixture. Gently push the cooked egg and SPAM toward the centre while swirling the pan so the mixture spreads evenly, cooking until it forms a “pancake” that’s set on the bottom but still soft on top.
- Evenly spread the SPAM and potatoes, then scatter the tomatoes and spring onions over them. Top with grated cheese and a dash of smoked paprika. Place under a hot grill until the cheese is golden and bubbling and the egg is cooked through. Slice the frittata and serve hot, straight from the pan.
