We are big lovers of halloumi in this house, and this has to be one of the quickest and most satisfying ways to serve it.

In this recipe, the cheese is sliced, coated in a mixture of runny honey and smoked paprika with sweet pepper flakes, then shallow-fried until golden and gorgeously sticky at the edges.

It takes literally minutes to make, so it's perfect for a quick lunch, a light supper, or even as a starter when you have friends round.

The salty halloumi against the sweetness of the honey and the gentle warmth of the smoked paprika is a brilliant combination.

Do be sure to check that the halloumi you are using is suitable for vegetarians, as not all halloumi is.

Halloumi

Halloumi is a firm, salty cheese that keeps its shape when cooked, making it perfect for grilling, frying, or tossing into warm salads. With its golden, crispy outside and soft, squeaky inside, it adds a delightful texture contrast to even the simplest dishes.

Traditionally made from sheep’s and goat’s milk, halloumi brings a bold Mediterranean flavour to everyday cooking. Whether you serve it with fresh vegetables, tuck it into a wrap, or pair it with sweet ingredients like honey or watermelon, halloumi adds richness and depth without any fuss.

Simple tomato salad (fresh, easy, and full of summer flavour)

🍅 A simple tomato salad is one of those dishes that proves how little you need to create something genuinely delicious. With ripe tomatoes, a splash of good olive oil, and a few fresh herbs, you can put together a vibrant side dish that works with almost anything—from grilled chicken to crusty bread.

This easy tomato salad celebrates seasonal produce, making it perfect for summer lunches, quick weeknight dinners, or effortless entertaining.

The key is choosing the best tomatoes you can find: juicy vine tomatoes, sweet cherry tomatoes, or even colourful heirloom varieties. When they’re at their peak, you barely need to do anything at all.

🌿 What makes tomato salad so good

Fresh ingredients — ripe tomatoes, fragrant basil, and quality extra‑virgin olive oil.

Minimal prep — ready in under 10 minutes.

Naturally healthy — packed with antioxidants, vitamins, and heart‑friendly fats.

Versatile — serve it as a side dish, spoon it over toasted sourdough, or enjoy it on its own.

🥗 How to make a simple tomato salad

Slice or halve your tomatoes, depending on their size. Add a pinch of flaky sea salt to draw out their juices, then drizzle with olive oil. A splash of balsamic vinegar or red wine vinegar adds brightness, while freshly torn basil brings that classic Mediterranean aroma. Finish with black pepper and, if you like, a few thin slices of red onion.

Tips for the best tomato salad

Use tomatoes at room temperature for maximum flavour.

Don’t skimp on the olive oil—this is where the richness comes from.

Add mozzarella or feta for a more substantial dish.

Let the salad sit for 5–10 minutes so the flavours meld beautifully.

    Pan-fried Halloumi

Pan-fried halloumi with honey, quick and easy and ready in minutes.

Prep time: 2 MinCook time: 3 MinTotal time: 5 Min

    Ingredients

    • 1 x 225g pack of Halloumi
    • 1 tablespoon olive oil
    • 2 tablespoons runny honey
    • 1 teaspoon sweet smoked paprika
    • sweet pepper flakes - to taste
    to serve
    • 2 x Pitta bread
    • tomatos salad
    • sauce of your choice

    Instructions

    1. Take the halloumi out of the packaging and pour away the liquid. Gently separate it along its natural split, pat dry with kitchen paper, and cut into slices—thick enough so they don’t fall apart.
    2. Handle the slices carefully to keep them intact. Heat the oil in a medium frying pan, then stir in the paprika, honey, and pepper flakes. Add the halloumi and fry for about a minute on each side until golden.
    3. Serve while hot with fresh pita bread and enjoy with a nice salad and fries if you're feeling hungry!
