Ultimate Garlic and Parmesan Bread

This is proper garlic bread as it ought to be! We've all seen those horrid ready made garlic baguettes in the supermarket. They also sell the same ones but call them 'cheese and garlic' baguettes.

Garlic and Parmesan Bread

Have you ever stopped to look at just how much cheese they actually put in? I doubt there's more than two pinches and for that they charge an extra 50p!

Whatever, there really is no comparison to what you can make very simply at home. For the sake of five minutes preparation, you have a crispy loaf that oozes buttery garlic and gooey cheese.

Ultimate Garlic and Parmesan Bread

This really is the Ultimate Garlic and Parmesan Bread. In 30 minutes from start to finish you have a crispy loaf that oozes buttery garlic and gooey cheese.
prep time: 5 minscook time: 25 minstotal time: 30 mins

ingredients:

100g butter - unsalted and softened at room temperature
a good handful of freshly chopped flat-leaf parsley
70g of freshly grated Parmesan cheese
4 garlic cloves - finely chopped
1 baguette (about 12 inches long) an already baked loaf is what you want, it goes more crispy than if you use a part baked one)

instructions

Preheat the oven to 220C/425F/Gas 7

Put the butter and garlic into a small bowl and mash then together butter until blended and you have a lovely garlicky, creamy paste. Now mix in the parsley.

Slice the baguette crosswise 1 inch apart but without cutting all the way through the loaf.

Put the loaf onto a large sheet of kitchen foil and spread some of the butter inside each cut until you've used it all up. Don't waste a single bit!

Now push the Parmesan into those cuts until it's all gone.

Then wrap foil around the bread, loosely.  Bake in the middle of the preheated oven for 20 minutes.

Uncover the top of the baguette and bake for about 5 minutes longer, or until the top is golden and the loaf is lovely and crisp.

  5. Your garlic bread looks so yummy Jan. Craig always makes ours with butter and garlic powder, I'll have to give him your recipe to try.

  6. The store ones are such a rip off. Home-made all the way so you can get some real garlicky flavor, and most importantly, that much more appropriate amount of delicious cheese. I could knock off more than my fair share w/every dinner!

  19. That looks absolutely divine. You can't beat homemade garlic bread, it's so easy, and tastes of garlic, unlike the store bought equivalent.

  23. Good recipe, best made with too much of everything - too much garlic, too much butter, too much bread.

  26. Yum! I used to do something similar with my family. We would make a paste with parmesan, grated / chopped garlic and oil and then have it as a snack / antipasto on, say, a Sunday, while my mom was cooking for the family, we'd have it with some bread and cheese cubes (similar to edam) or when we were having a BBQ.
