I roasted the tomatoes, but you can easily pan-fry them in just a few minutes. I used British Piccolo tomatoes, though any baby (grape) tomatoes will work. That said, the sweetness of these Piccolo tomatoes is beyond words—they are truly the best-tasting tomatoes.

How to roast tomatoes

Simple yet delicious. I drizzled the tomatoes with a tiny amount of olive oil and threw in a few garlic cloves (in their skin).

Then slow-roasted them for about an hour on a really low heat; 150°C/300°F or Gas 2. Check on them in the last 15 minutes since the last thing you want is for them to burn. 😨

Ciabatta, goat's cheese and a few roasted tomatoes are all you need to make this delicious sandwich.

It's amazing how just a few ingredients make such an easy lunch.

Simple ingredients 

  • olive oil for drizzling
  • 2 x ciabatta rolls - sliced
  • 125g soft goat cheese
  • a few roasted tomatoes
  • a few freshly snipped chives

How to make this delicious sandwich

Heat up a grill pan till it's nice and hot. Drizzle each slice of ciabatta (on the inside part, not the crust) lay them oil side down and leave for a minute or so, by which time they will be nicely toasted.

Remove the ciabatta and leave it to cool for a minute. Spread generously with goat cheese and top with roasted tomatoes and freshly snipped chives.

That's it, job done!

Goat Cheese Sandwich

I was making pasta sauce so I pinched a few tomatoes to make this. Instead, drizzle a few tomatoes with olive oil and heat in a frying pan until soft.

Ingredients

  • olive oil for drizzling

  • freshly snipped chives

Instructions

  1. Heat a griddle pan till it's nice and hot. Drizzle each slice of ciabatta (on the inside part, not the crust). Lay them oil side down and leave for a minute or so until nicely toasted.
  2. Remove the ciabatta and leave it to cool for a minute.
  3. Spread generously with goat's cheese and top with a few roasted tomatoes and snipped chives. That's it, job done!
