How to Make It

Prepare all the vegetables by peeling and chopping them into similar‑sized pieces so they cook evenly.

Add the chopped vegetables to the slow cooker along with the diced chicken. Scatter over the dried mixed herbs, mustard, black pepper, and the bay leaf.

Add the chicken stock pot and the gravy granules (see recipe card for exact amounts and full recipe instructions). Don’t worry if it looks like there isn’t much liquid — slow cookers naturally create moisture as the vegetables cook.

If you add too much liquid now, you’ll struggle to thicken the sauce later without using a whole jar of gravy granules! Trust the process — it works.

Give everything a good stir, then pop the lid on.

Which Slow Cooker Setting to Use?

Cook on LOW for 7–8 hours, MEDIUM for 5 hours, or HIGH for 4–5 hours. I cooked mine on high because it was getting late, and it turned out perfectly cooked in 5 hours.

The gravy becomes beautifully rich and glossy — perfect with creamy mashed potatoes.

Easy Slow Cooker Chicken Casserole

A cosy, dump‑and‑go slow cooker chicken casserole with tender vegetables and a rich, thick gravy.

Ingredients

  • 2–3 skinless chicken breast fillets
  • 2 carrots
  • 2 stalks of celery
  • 1 clove garlic
  • 1 large onion
  • 4–6 chestnut (brown) mushrooms
  • 1 leek
  • 1 heaped tbsp mustard (Coleman’s English mustard)
  • 1 tsp dried mixed herbs (Italian blend)
  • 1 bay leaf
  • Pinch of black pepper (don’t add salt)
  • 1 Knorr chicken stock pot
  • 300ml boiling water
  • 2 tbsp Bisto Best Chicken gravy granules (plus extra for thickening)

Instructions

  1. Prepare the vegetables: slice the carrots; clean the celery, remove any stringy bits and slice thinly; finely chop or mince the garlic; peel and slice the onion; slice the mushrooms; clean and slice the leek. Cut the chicken breast fillets into large chunks.
  2. Add all the prepared ingredients to the slow cooker. Sprinkle in the dried mixed herbs, add the mustard, bay leaf, black pepper, and the Knorr stock pot.
  3. Dissolve 2 tablespoons of gravy granules in 300ml of boiling water, then pour it into the slow cooker. Stir everything well to combine.
  4. Place the lid on the slow cooker and cook on LOW for 7–8 hours or HIGH for 4–6 hours. Slow cookers vary, so check your model’s instructions.
  5. Once fully cooked, remove and discard the bay leaf. Turn the slow cooker to HIGH and take off the lid.
  6. Mix half a cup of liquid from the pot with 2–3 tablespoons of gravy granules, then pour it back into the slow cooker — this helps prevent lumps. Leave the lid off and let the casserole thicken for a few minutes, adding more gravy granules if needed.
  7. Taste and adjust the seasoning, then serve.

Notes

To serve 4, just add another chicken fillet.Instead of mashed potatoes, and for less work, you could add baby new potatoes - just cut them in half and throw them in at the beginning.
