A relatively cheap, easy and filling meal, you can double the recipe to serve more people.

There are several ways to prepare corned beef hash, and if you're short on time, here's a quick guide on how to get it ready for cooking. You don't have to bake it in the oven. 😉

  1. Firstly, there are several ways to prepare corned beef hash. You can prepare it in advance, just like I did. In that case, make sure your onions and potatoes are completely cooled before mixing in the corned beef.
  2. Alternatively, you can combine all the hot ingredients and cook them immediately, reducing the time needed in the oven.
  3. Quick method: combine the cooked onions and potatoes in a large frying pan (skillet), add the corned beef, and cook on the stovetop while stirring gently (to prevent the corned beef from becoming mushy) until everything is piping hot. Cheese can still be added if you wish.

If you’re not a fan of adding cheese, just skip it altogether.

How to make corned beef hash - cook-ahead version

Sauté the onions in a bit of vegetable oil until they become tender. Allow the cooked onions and potatoes to go completely cold before adding them to a baking dish along with the corned beef.

Top with cheese (for good health) 😂 Everything is better with cheese!

Cover with foil and put into your preheated oven for about 25 minutes.

Take off the foil and return it to the oven until the cheese is lightly browned.

Baked Corned Beef Hash

Baked Corned Beef Hash

Easy, cheap and filling corned beef and potato dinner.

Ingredients

  • vegetable oil
  • 500g cooked baby potatoes
  • 1 x 340g can of corned beef - cut into bite-sized pieces
  • 2 medium-sized brown onions - peeled and thinly sliced
  • a handful of cheese (optional)
To serve - optional
  • 1 x 400g can of good-quality baked beans - I like Branston or Heinz
  • 1 fried egg per person

Instructions

Preheat your oven to 200°C/400°F
  1. Cut the potatoes into bite-sized pieces and add to a pan of cold salted water. Bring to a boil, then turn to a simmer - cook for about 12-15 minutes.
  2. Meanwhile, heat a bit of oil in a large frying pan and sauté the onions, stirring occasionally. Cook them until they are soft and tender, about 10-15 minutes.
  3. Thoroughly drain the potatoes and transfer them to a baking dish. If you're not cooking it right away, ensure both the potatoes and onions have fully cooled before mixing them with the corned beef.
  4. After placing the potatoes and onion in your dish, add the corned beef and gently stir to combine.
  5. Sprinkle the cheese on top, cover tightly with kitchen foil, and place it on the middle shelf of the oven. Bake for approximately 25 minutes.
  6. If you're cooking it immediately with the ingredients still warm, it should only take about 10 minutes - just make sure it's steaming hot before serving.
  7. Remove the foil and return it to the oven until the cheese has melted and turned golden.
  8. Serve with beans and top with a fried egg.
