Tomato and Onion Tart with Goats Cheese

An easy tomato tart made with puff pastry, goat cheese, and chilli jam—no fancy cooking skills required. This tart not only looks impressive but also tastes delicious!

Ready-made pastry is the way to go. I particularly like Jus-Rol puff pastry.

Chilli jam can be found in most supermarkets.

A simple tart like this can be rustled up in next to no time and is a real crowd-pleaser for lunch or brunch.

You don't have to use the exact ingredients; just make it up as you go along to suit your taste.

If you don't like goat cheese, top with a little Cheddar instead and if you don't like any sort of cheese, then I've no help for you!

Tomato and Onion Tart with Goats Cheese

Tomato and Onion Tart with Goats Cheese

Easy to make and does not require any fancy cooking skills.

Ingredients

  • 1 x 500g of ready-made puff pastry - at room temperature
  • chilli jam relish - your favourite brand
  • 2 medium-sized red onions - peeled and thinly sliced
  • half a red bell pepper - deseeded and thinly sliced
  • 1 or 2 tomatoes - thinly sliced
  • goat's cheese - rind on and sliced
  • salt and pepper to season
  • 1 x egg - yolk mixed with a tiny splash of water

Instructions

Preheat your oven to 200C/400F or Gas 6
  1. First, heat a large frying pan and add a generous splash of oil, about a tablespoon.
  2. Gently cook the sliced onions over low heat until they’re soft but not browned. Remove and set aside, then do the same with the sliced peppers.
  3. Combine the peppers with the onions and let them cool completely.
  4. Roll the pastry out into an oblong (about 28cm or 11 inches by 22cm or 9 inches long)
  5. Making sure you don't go all the way through, score a line about 2cm around the edge. Prick the middle part with a fork, again taking care not to go through the pastry.
  6. Put the pastry on a non-stick baking sheet and bake for 8-10 minutes. Take it out of the oven and press down the area you pricked with a fork until it’s flat, or peel off and discard the thin top layer of pastry if you prefer.
  7. Spread the chilli jam evenly and gently over the surface. Layer the cooled onions and peppers, and top it all off with fresh slices of tomato.
  8. Season with a pinch of salt and pepper, then layer on slices of goat cheese and brush the pastry edges with the egg wash. Place it back in the oven and let it bake for around 15 minutes.
  9. Serve while it's still nice and hot with a side of salad.
