Every week, I make up some sort of dish from things like an odd bell pepper, a piece of cheese or a chilli pepper that's escaped me all week!

Yes, it all gets used to make either a pizza or as a topping for chicken fillets, to make a sort of chicken pizza melt.
Of course, you can top your chicken with whatever takes your fancy. Just use whatever you have that's leftover.
Since the odd bits in my fridge consisted of making prosciutto and salami, here's what I did.
I used bell peppers, onion, and sliced chilli pepper. I then topped it with prosciutto (Parma ham) and salami, which, of course, doesn't need cooking.
Whatever you do, finish with a nice layer of grated cheese. I used a mixture of mozzarella and extra matured cheddar and sliced tomato.
Cover the dish with kitchen foil and pop it into a preheated oven at 200°C/400°F or Gas 6 for about 20 minutes.
Remove the foil and cook for another 10 minutes or until the top is lovely and golden and the chicken is cooked through.

Chicken Melt - Fridge Clear out Recipe
There is no real recipe, just use odd things you have in your fridge!
Ingredients
- skinless chicken fillet
- onions - thinly sliced
- bell peppers - thinly sliced
- mushrooms - thinly sliced
- cooked ham of any kind
- pepperoni, salami, etc
- grated (shredded) cheese
Instructions
- Bash the chicken fillet between two sheets of cling film till they are of even thickness; don't go too mad, you don't want them too thin. Why are we bashing them? Because they will cook evenly and much quicker without drying out.
- Get a large frying pan and add a small amount of oil.
- Fry things first, such as raw bacon, sliced raw onion, sliced peppers and chillies, season with a little black pepper and depending on your chosen topping, you probably won't want to add salt since bacon and things like Parma ham are already salty.
- Allow anything you've just had to cook to cool before continuing.
- Add the chicken to a shallow glass or stoneware dish and top the chicken with anything that takes your fancy.
- I used bell peppers, onion, and sliced chilli pepper. I then topped it with Prosciutto (Parma Ham) and Salami, which, of course, doesn't need cooking.
- Whatever you do, finish with a nice layer of grated cheese. I used a mixture of mozzarella and extra matured cheddar.
- Cover the dish with kitchen foil and put it on the middle shelf of a preheated oven 200°C/400°F or Gas 6 for about 20 minutes. Remove the foil and cook for another 10 minutes or until the top is golden and the chicken is cooked through.
