Fridge Clearout Recipe - Ratatouille

Fantastic dish for using up any odd peppers and courgettes you might happen to have living in your fridge, and a great way for your family to eat more veg too!
With nice fresh crusty bread this is a meal on it's own, but ratatouille is perfect as a side dish to chicken or whatever else you fancy for that matter.

There's nothing tricky involved to make it either, which is great if you're not really into cooking but want something different for a change.

Chicken Melt - Fridge Clean Out Recipe

A great way to use any bits and bobs when having a fridge clear out.  Every week I make up some sort of mad dish or other from things like an odd bell pepper, a piece of cheese or a chilli pepper that's escaped me all week!

Yes it all gets used to make either a pizza or as a topping for chicken fillets, to make a sort of chicken pizza melt. 

Of course you can top your chicken with whatever takes your fancy.  Just use whatever you have that's leftover.  Since the odds and sods in my fridge consisted from making Prosciutto and Salami Pizza here's what I did.


Leftover Recipe - Potatoes Carrots and Gammon with Fried Egg

Great way to use up any leftovers such as boiled potatoes, carrots and any bacon or other bits and bobs that take your fancy.  Top with a fried egg and there you have it a nice easy snack taking just minutes to make and serve.

Just like bubble and squeak, except this doesn't have greens.
Perfect for using up any leftovers from bacon and pease pudding, which is actually what this is.

Baked Eggs with Leftover Chilli and Tortilla Wraps

Ever made too much Chilli con Carne and then wondered what to do with the rest?  I always make too much and have come up with all manner of things to do with it!  

You can stretch it out further by adding a few other tasty bits and bobs, such as tomato, spring onion, jalapeno peppers and cheese - you must have cheese!  This particular concoction of mine even uses up the odd tortilla wrap you might have floating about somewhere too!

Please note the serving dish you use must be able to go into the oven.

Pizza Style Chicken Melts

Chicken with a pizza style topping, or even no dough chicken pizza - whatever you fancy calling it!  A great fridge clear out recipe to use up the odds and ends in your fridge.

Serve with chips for a quick and simple meal - even if all that cheese probably wont do you a bit of good - it's nice!

Jan's Chicken Melt - Pizza Style

Chicken with a pizza style topping is so easy to do and a great way to use up odd bits of food in the fridge!
I had both Mozzarella and Red Leicester cheese but not enough to make anything proper with.  That along with an odd green chilli a few rashers of bacon and a red bell pepper.  Onions you should have anyway says I - so armed with these ingredients the pizza topped chicken was created!

Vegetable and Mozzarella Cheesy Tray Bake

A really easy tray bake of peppers, onions, tomatoes, courgettes, Roquito chilli peppers and potatoes, topped with two kinds of Mozzarella.  
  All baked in the oven till cooked and the cheese is gooey and golden.
  This was a fridge clear out recipe which was so easy to do, and turned into a vegetable cheesy goodness.

Chicken Chorizo Pepper Melt

Chicken fillets topped with chorizo, peppers, onions, red chilli and loads of mozzarella. Cooked in the oven till the chicken is done and the cheese melts nicely.  Might look a bit messy, but whatever it tasted good!
My fridge clear out recipe turned out rather nice indeedy!


Roasted Mediterranean Vegetables with Goats Cheese

Another fridge clear out recipe!
The cherry tomatoes were doing nothing in my fridge along with the goats cheese and the sweet peppers.
So, I roasted them all in some lovely olive oil seasoned with salt and pepper - simple as that.
Preheat your oven to 200C/400F/or Gas 6
You will need:
Any amount of the following but here's what I used;
2 small red onions, 1 courgette, 2 sweet pointed peppers - de-seeded, 2 cloves of garlic - sliced and a bunch of cherry tomatoes on the vine. Then a good glug of good quality olive oil, salt and freshly ground black pepper.
2 goats cheese rounds
Cut everything into chunks - not too small and just slice the courgette. Peel and slice the garlic.
Put the lot into a roasting dish - except for the tomatoes. They wont take long to cook so leave them out for now.
Pour over a good glug of olive oil - season with salt and pepper then mix it all about so everything gets coated nicely.
Remember not to put those tomatoes in yet - keep them to one side.
Cook for about 10 minutes then give it a stir. Cook for another 5-10 minutes (just make sure they're not getting too done) then add rub the tomatoes with a little oil then place them onto top of the veg.
Cook for another 5 minutes - and add the goats cheese drizzle with a teeny bit of olive oil and cook for 5 minutes more. Just check but the cheese should have just started to melt.
Remove the lot from the oven and use a cooks blow torch to finish off the goats cheese giving it a nice bit of colour. Serve straight away.

Credit Crunch Recipe - Fried Noodle, Egg, Cheese and Bacon Fridge Clearout!

Whilst the whole wide world seems to be going through the 'Credit Crunch' you can add any kind of vegetables etc to this that you might have otherwise thrown away. Ideal for when you have a fridge clear out day - Thrifty Jan ah!

Now, I don't suppose this will have done me a bit of good with the noodles, cheese and bacon......Lord knows how many calories are in this lot. But hey ho, I've never added calories up in my life and thank goodness, I haven't had to.
Remember a while ago I fried left over spaghetti?  Well this time I had some left over noodles. So, noodles got fried, same sort of thing me thinks.
Here is another concocted recipe from fridge left overs!
There's no real recipe so you can use whatever else you fancy.
To make this for 2 people I used:
noodles, you know the kind, the ones that come ready to stir fry
2 rashers of bacon cut into small strips
2 eggs - lightly beaten
salt and pepper to season
chili oil for frying and drizzling - use garlic or vegetable oil if you want, I just like spicy things!
2 spring onions - sliced diagonally - just so it looks like you've made an effort!
a good amount of grated matured cheddar cheese
a few bits of feta crumbled
In a large frying pan:
In a little chili oil fry the bacon bits until nice and crisp and golden
Now add the spring onions and stir for a minute.
Put in some more chili oil and now add the noodles. Breaking them up if they clump together. You can cut them into smaller bits with kitchen scissors before hand if you wish.
Get the noodles hot and cooking away then stir in the eggs. Leave to cook for a minute and then throw in the grated cheese. Season with a little salt and pepper.
It will look like a spaghetti omelet, so now try turning it over. Don't fuss about it falling apart and if actually only half of it gets turned over - it all adds to the look! You'll end up with crunchy, and not so crunchy bits and soft noodle along with melty cheese too.
Divide in half and tip onto serving plates. Top with a little crumbled feta, drizzle with a bit more chili oil and tuck in.

Fried Spaghetti and Cheese

An idea for left over spaghetti - I'm always making too much. I'm still decorating, so we've had over a week now of strange, made up dinners!  Yesterday lunch time I made a really quick snack of fried spaghetti, egg and cheese.

Whatever, it works. Crispy spaghetti with eggy bits and melty cheese equals triple yum. You can add whatever else you fancy adding - onion or chives perhaps, or use Parmesan cheese instead of cheddar?
