3 Delicious Dessert Quesadillas

Quesadillas are a delicious example of Mexican cuisine at its best. 

Made primarily of flour tortillas (although corn tortillas work brilliantly too), the quesadilla is basically a tortilla sandwich packed full of tasty treats primarily cheese, meats, and spices.

But when your sweet tooth comes a-calling, sometimes a savoury quesadilla just won’t do!

Thankfully, there are some delicious dessert quesadillas that are quick and easy to make when your sugar cravings simply won’t quit.

1. Cream Cheese, Raspberry, & Pineapple Double-Decker Quesadillas

Serves two

Ingredients

3x 6” flour tortillas

2 tbsp cream cheese, room temperature

5 tbsp crushed pineapple, drained

2 tbsp raspberry jam (you could also use strawberry if you prefer)

3oz fresh raspberries (or 4 medium-sized strawberries)

½ tbsp unsalted butter

½ tbsp powdered sugar

2 tbsp honey

Method

1. Take two of the tortillas and spread the cream cheese evenly over one side of each.

2. Place the crushed pineapple on top of one tortilla and spread it right to the edges.

3. Please the second cheese-coated tortilla on top of the pineapple, cheese-side down.

4. Spread jam on top of the second cheese-coated tortilla, slice your chosen berries into small pieces, and sprinkle them on top of the jam.

5. Place the third tortilla on top of the berries and jam to close the sandwich.

6. Melt the butter in a skillet over a medium-high heat.

7. Once melted, add the quesadilla, and cook for approximately 1-2 minutes until browned on the bottom.

8. Carefully flip the quesadilla over and cook it for another 1-2 minutes on the other side.

9. Transfer your cooked quesadilla to a chopping board and carefully cut into quarters.

10. Sprinkle your quesadillas with powdered sugar and drizzle over some honey for serving. 

2. Chocolate & Strawberry Quesadillas

10-12 servings

Ingredients 

¼ cup granulated sugar

1 tbsp ground cinnamon

5 burrito-sized flour tortillas

8oz cream cheese, softened

1 cup chocolate hazelnut spread

16oz fresh strawberries, sliced

2 tbsp butter, melted

Method

1. Preheat your broiler.

2. Mix the sugar and cinnamon together and set to one side.

3. Beat the cream cheese and ½ cup of chocolate spread in a large bowl until combined.

4. Divide the cream cheese and chocolate mixture and spread evenly on each of the 5 tortillas, be sure to spread to the edges!

5. Sprinkle each tortilla with half the sliced strawberries and fold them in half (like closing a book).

6. Brush the top of the quesadillas with melted butter and sprinkle with the cinnamon-sugar mixture.

7. Broil the quesadillas for 3-5 minutes or until they are slightly crispy.

8. Transfer to a cooling grid and leave to cool for 5-6 minutes.

9. While your quesadillas are cooling, microwave the remaining chocolate spread for 20-30 seconds (until melted but not burned). 

10. Cut each quesadilla into 3 pieces and sprinkle over the remaining strawberry slices before drizzling with the melted chocolate spread.

3. Chocolate & Peanut Butter Quesadillas

Serves two

Ingredients

2 whole-wheat tortillas

1 tbsp butter

2 tsp cinnamon

2 tbsp peanut butter

2 tbsp chocolate chips

1 tbsp honey

½ cup whipped cream

Method

1. Take your tortillas and evenly spread butter on one side of each before sprinkling with cinnamon.

2. Spray cooking spray onto a skillet and cook the tortillas on medium heat until golden brown.

3. While they’re still warm, place one tortilla cinnamon-side up and spread with peanut butter to the edges.

4. Pour chocolate chips on top of the peanut butter evenly and add a drizzle of honey before topping with the second tortilla.

5. Top with whipped cream, drizzle with honey and serve warm. 

Tortillas

Although tortillas can be found in most local stores, for a truly fantastic quesadilla, you may want to think about making your own! It’s quick and easy to make homemade tortillas, particularly when you have a top-quality tortilla press (like this one from Uno Casa).  

All you need is corn or wheat flour, salt, water, and olive oil to make your own tortillas at home. 

Simply create the dough by combining the ingredients and kneading until a smooth dough forms. Once you’ve prepared your dough, simply separate and place onto parchment paper in the centre of your tortilla press. 

Gently close the lid to create a perfectly shaped and sized tortilla in seconds.

Tortillas then just need a quick 30-40 seconds in a hot pan to cook, then they’re ready to be topped and filled with your favourite ingredients to create almost limitless dishes the whole family will love, including the delicious dessert quesadillas we mentioned above!
