Mexican-style Rice - Knorr Flavour Pot Product of the Year Challenge

The lovely people at Knorr have just collected First Prize in the Sauce and Seasoning category for this year’s Product of the Year awards for their innovative Flavour Pots.  To be honest I'm not at all surprised since flavour pots are a really easy way to infuse your cooking with the flavour of fresh herbs and spices just by stirring one into your dish whilst cooking.  Simple to use and with great results.


Along with some other bloggers we asked to join in the Knorr Flavour Pot – Product of the Year Challenge!
So with that in mind I came up with Mexican-style Rice. Very easy and quick to make but since I hadn't used flavour pots before I did wonder if they would too spicy or not spicy enough - but hey, one pot was just perfect and added a lovely flavour to the rice.  Yes I'll be using Knorr use Flavor Pots again.
To make this recipe even more simple I'll use cups for the rice measurement like Americans do!

To serve 4- 6 as a side you will need:
olive oil

2 cups of Long Grain Rice
1 large onion - peeled and finely diced
1/2 a red bell pepper - cut into small dice 
1/2 a green bell pepper - cut into small dice
1 Knorr Mexican Flavour Pot 
1/2 a can of Kidney Beans - rinsed and well drained
a small tin of Sweetcorn - drained

How to do it:
Cook the rice following the absorption method as follows - Heat half a tablespoon of olive oil in a heavy based saucepan on medium heat. Pour in 2 cups rice and stir for a minute or two now add 4 cups of boiling water and just 1/4 teaspoon of salt.  Add the Knorr flavour pot and give it a good stir.
Pop on a tight fitting lid on saucepan and turn heat to lowest possible heat setting and leave for 10 minutes without removing the lid.
Turn the heat off and leave for a further 15 minutes - again without removing the lid.
Remove the lid and fluff the rice with a fork. 

Meanwhile get a large frying pan and add a tablespoon of olive oil.  Cook the onion and peppers till nicely softened but not coloured.  Stir in the drained sweetcorn and kidney beans along with the cooked rice and have a taste.  Adjust the seasoning adding a little salt if needed.

Serve with whatever takes your fancy.

  1. I love dishes like this Jan, so simple and tasty! My boys love rice so i'll def be giving this a whirl. Knorr do some great products. I love their vegetable stock pots.
