Sweet Potato Recipe

A mixture of sweet potato, potato, feta, chilli and coriander finished with a squeeze of lemon.

So, it took me a lot longer to make Piri Piri Chicken from Jamie Oliver's 30 Minute Meals book, but hey ho, it was so worth it!

By the way, in his book, he also manages to rustle up some Portuguese Tarts as well - all three dished in 30 minutes!

Serve these dressed potatoes with Jamie's Piri Piri chicken. Although these 'dressed potatoes' as he calls them can be served with whatever takes your fancy.

Sweet potatoes are starchy, sweet-tasting root vegetables with thin, brown skin on the outside and coloured flesh inside. The most common colour inside is orange but some varieties are white, purple or even yellow.

You can eat sweet potatoes whole or peeled, and the leaves of the plant are edible, too.

Rich in fibre, vitamins and minerals, find out why these starchy, sweet root vegetables are so good for you and discover the best ways to cook them.

One of your five a day

80g of sweet potato, or about one medium potato, counts towards one of your five-a-day, unlike white potato which does not.

Sweet potato and potato in a bowl with lemon.

Cover with clingfilm and put into the microwave on full power for 15 minutes.

Chopped feta chilli and coriander.

Finely chop the red chilli and most of the coriander onto a board, mixing as you go.

Add the feta and keep chopping and mixing. Check the potatoes are cooked through, then use tongs to squeeze over the cooked lemon.

Add the coriander mixture from the chopping board to the potatoes. Mix and mash everything together. Season, garnish with the remaining coriander and you're done.

  1. i just watched him make this. the LEMON is squeezed over the potatoes. and he does not chop up the coriander (cilantro) and feta nearly as much;it's more-or-less a rough chop, and then he "mixes" it all together with his fingers. looks delish!
