Bacon and Egg Muffin - Classic Breakfast Sandwich

Classic Breakfast Sandwich from the book 'The Encyclopedia of Sandwiches'.  
What a great book this is - I'm loving it!
Packed full of recipes for the most delicious sandwiches ever - the photography is the book is fantastic - unlike mine of the above muffin!
There's a lobster roll that just looking at the picture, I'm sure you'll agree with me, you could eat it right now! 
How about a Denver Sandwich?
 
There's even a recipe for an ice cream sandwich!  Every recipe is really easy to follow.

Recipe taken from the book:
 
To make one sandwich you will need:
about 2 tablespoons of butter divided
1 English muffin, split open
2 rashers of bacon
2 eggs, lightly beaten
salt and pepper to taste
1 slice of American  or Cheddar cheese

How to do it:
Lightly butter English muffin using half of it, and toast on a skillet until crisp and golden.
In a non stick skillet, over a medium heat, cook the bacon for 2 or 3 minutes until crisp, flipping once.
Melt the remaining butter in a skillet over a medium heat.  Add the eggs and season with salt and pepper and cook for 2 minutes, or until slightly puffed.  Flip and cook for another minute.
Place the cheese on the bottom of the muffin.  Top with one slice of bacon, then egg, then the second rasher of bacon.  Close the sandwich and serve hot.

  1. Looks great Jan! Guess what I was posting tomorrow! Yep same sandwich. oh well, there's room for two I think! I didn't have this book to go from though, just did it. Much better than McDonalds! Great minds must think alike!

  3. That looks way better than McD's version! I'm just about to go to bed and you've got me considering breakfast already. LOL I've got eggs, bacon and muffins in the freezer .. hmmm. ~rumble~ lol
