Here is Nigella's recipe, which I followed exactly but I could only get 9 muffins and not 12 but I would think that's just me pouring too much in each muffin case.
Yield: 12

Chocolate Chip Muffins - Nigella
Easy to make and Nigella's recipe works!
ingredients:
250g plain flour
2 teaspoons baking powder
2 teaspoons baking powder
Half-teaspoon bicarbonate soda
2 tablespoons best quality cocoa
175g caster sugar
150g chocolate chips - plus more for sprinkling later
250ml milk
90ml vegetable oil
1 large egg
1 teaspoon real vanilla extract
instructions
Preheat the oven to 200C/400F/Gas6
Fill a 12-bun muffin tray with paper cases.
Weigh out the dry ingredients into a large bowl. Pour all the liquid ingredients into a measuring jug.
Mix both together, you will have a runny batter. Now spoon into the muffin cases.
Sprinkle more chocolate chips on top then cook for 20 minutes or until the muffins are risen and springy.
Thos muffins look delicious Jan, and I think they just might be perfect!! I can't wait to give them a try! XXOO
ReplyDeleteMMMMMMM....Jan, they look so delicious!!!
ReplyDeleteYay! It's perfected already! I would love to try to make this chocolate chip muffins :)
ReplyDeleteHmmm...Chocolate Chip Muffins, they sure look yummy, Jan.
ReplyDeleteMy chips use to sink too, until someone told me to coat them with a bit of flour before adding them to the ingredients. I'll have to try your method.
Thanks for sharing...
A Jan-errific looking muffin...I understand they travel well by post? ;)
ReplyDeleteThese muffins do look perfect! I have been using Dorie Greenspan's chocolate muffin recipe, I'll try your version next time.
ReplyDeleteWhen a recipe says it will make 12 muffins - it rarely does!!!! The bigger the better as far as Im concerned
ReplyDeleteMmmm. You can't beat chocolate chip muffins.
ReplyDeleteSUPERB!!!!
ReplyDeleteThose muffins look great. Well done for giving them another go.
ReplyDeleteNigella always comes to the rescue. A lot of US cakes use (corn) oil. I use a carrot cake recipe which contains rather a glug of oil - helps keep it moist, and last longer too.
ReplyDeleteThey look really good and easy to make, which is a bonus!
ReplyDeleteIf you like dark choc muffins, try dan lepards recipe, bit fiddlier than these delights but worth the effort! :)
Glad these were a success! They look very rich and delicious!
ReplyDeleteLooking good Jan, nicely risen!
