Are bell peppers good for you?

They most certainly are!

Why are peppers good for you? Well, let me tell you, for a start, did you know a large red pepper contains three times more vitamin C than an orange?

In fact, peppers, in general, contain three times more Vitamin C than oranges and other citrus fruits.

A single red pepper contains twice the Vitamin C of a green one, and ten times the Vitamin A, how marvellous is that?

Now, there's nothing quite as nice as a roasted or grilled blackened pepper.

Not only does it make them easy to peel but it brings out their natural sweetness and they taste amazing.

If you've never tried this get roasting or grilling and have a go at making marinated peppers.

Delicious when served with some lovely warm fresh crusty bread - drain from the oil first. I roasted my peppers but you can of course grill them if you wish. 

Whatever you do, serve at room temperature and not cold! They are far tastier than buying marinated peppers in a jar.

The Mediterranean Diet

The Mediterranean diet is a way of eating based on the traditional cuisine of countries bordering the Mediterranean Sea.

While there is no real definition of the Mediterranean diet, it typically consists of eating vegetables, fruits, beans, whole grains, nuts and seeds, and olive oil.

If you've never tried this get roasting or grilling and have a go at making marinated peppers.

Delicious with some lovely warm fresh crusty bread. I roasted my peppers but you can of course grill them if you wish.

Equipment

You will need a nonstick shallow rimmed baking sheet.

Ingredients

  • red bell peppers
  • yellow bell peppers
  • extra virgin olive oil
  • lemon juice
  • garlic
  • a pinch of salt
  • dried oregano
  • fresh parsley

Storing

You can keep these in sterilised jars in the fridge for a couple of days.

The oil will have solidified but once it is brought back to room temperature it will return to its liquid state.

Marinated Peppers

Marinated Peppers

Marinating peppers in oil really brings out their natural sweetness - they taste amazing.
Prep time: 10 MinCook time: 35 MinTotal time: 45 Min

Ingredients

  • 2 large red bell peppers
  • 2 large yellow bell peppers
  • 60ml extra virgin olive oil
  • juice from 1 lemon
  • 1 fat clove of garlic - finely chopped
  • a tiny pinch of salt
  • a pinch of dried oregano
  • about a tablespoon of freshly chopped flat leaf parsley

Instructions

Preheat your oven to 230°C/450°F or Gas mark 8
  1. Rub each pepper with a little olive oil and make a couple of very small slits with a sharp knife - just to stop them exploding whilst they cook!
  2. Put them onto a baking tray on the middle shelf in your preheated oven for about 15 minutes before turning them.
  3. Continue to cook for about 20 minutes or until they're nicely blackened - but not burnt, then remove from the oven and put them in a bowl. Cover with cling film and leave to cool.
  4. You'll find the stalk will easily pull out along with most of the seeds. Slice the peppers in half and remove the rest of the seeds.
  5. Slice the peppers into strips and put them into a clean bowl.
  6. Mix together the olive oil with the chopped garlic, salt and oregano. Pour this over the peppers and leave for a couple of hours to marinade.
  7. When you're ready to serve, chop the parsley and stir into the peppers and oil.
  8. Drain from the oil and serve at room temperature with chunks of nice fresh bread for dipping and mopping.

  1. I learned something invaluable today. Personally, I have always been quite fonder of green bell peppers over red ones. But now I am seeing red bell peppers under a different light. Those marinated peppers look yum!
