Cajun Spiced Chicken with Bacon and Cheese




Okay there are probably a good few calories in this meal - but hey.
Now and then it doesn't matter - you'll be fine!
Now this is a 'Jan' recipe!




 

Cajun chicken on crusty baguette - sound good?

You will need:
2 skinless chicken breast fillets - sliced into thinnish strips
4 rashers of streaky bacon - cut into 1 inch pieces
1 handful of grated Cheddar cheese
2 crusty baguettes
For the marinade mix together the following:
2 teaspoons of cornflour, 2 tablespoons of dark soy sauce, 2 teaspoons of Cajun spice mix. I used the brand Schwartz
What to do next:
Put the chicken strips into the marinade mixture for at least 15 minutes.
The baguettes I used are the 'part baked' ones you can get from the supermarket. They take about 10 minutes in the oven and are quite amazing as you have the nearest you'll get to freshly baked bread in a matter of minutes!
Once the baguettes came out of the oven, I sliced them length ways and allowed them to cool.
Meanwhile (back at the ranch) I fried the bacon until it was nicely cooked and getting on for crunchy. There will be no need to add any oil to your pan as the streaky bacon will produce enough whilst it's cooking.
Remove the bacon and set to one side. Now drain off the excess marinade from the chicken and fry the chicken in the same pan as you used fro the bacon - without washing it. The chicken will cook in the fat that came from the bacon and take on all those nice sticky gooey bits in the pan that I'm always going on about.
Just before your chicken is cooked through, put the bacon back in to heat through.
Now take your sliced open baguettes and place under a grill just for a minute to lightly toast. Place them on a baking tray and top with the chicken and bacon.
Now sprinkle over a good amount of the grated cheese and return to the oven just until the cheese melts. Mmmm YUM!

The only thing missing is some potato wedges.....
Oh and a dip or some sort - this was just a squirt of tomato ketchup and a little chilli sauce mixed together. And yes I forgot the macro thingy on the camera again!
