Tomato and Pepper Tart with Chilli Jam and Goats Cheese

So very easy to make and without any fancy cooking skills involved, this tart not only looks good, it tastes good too!

Of course ready made pastry is the way to go.
Personally I'm a big fan of Jus-Rol and for this I used their puff pastry.
The chilli jam I used is the brand 'Le Mesurier', I love their whole range of chutneys and relishes.

Easy Breakfast - Recipe Idea

The perfect lazy day breakfast of scrambled eggs on toast topped with crispy bacon and roasted tomatoes.  Serve with a nice cup of coffee (tea for me please) and after eating this you'll be all set and ready to do absolutely nothing for the rest of your lazy day.
Well in my case, till lunch time - always hungry am I.

Chicken Fillets with a Pizza Style Topping

Chicken with a pizza style topping, or even no dough chicken pizza - whatever you fancy calling it!  A great fridge clear out recipe to use up the odds and ends in your fridge.
Serve with chips for a quick and simple meal - even if all that cheese probably wont do you a bit of good - it's nice!

What Happened to Mary's Tomatoes!

Slow Roasted Semi Dried Tomatoes Preserved in Oil.
A couple of weeks back good friend of mine Mary gave me some lovely tomatoes - loads of lovely tomatoes.
As I haven't got round to telling her what I did with them, I thought I'd do a post.  Preserved them is what I did!  Well for a few weeks anyway.
Of course the jar has to be filled to the brim with oil to keep air out and the tomatoes will stay ready to use when you want.  Sauces on top of a pizza, or however else you fancy them.
